These keto buffalo chicken meatballs are the perfect quick and easy low carb game day appetizer
While I am a huge fan of keto wing recipes, from time to time, I like to kick things up a notch. These keto buffalo chicken meatballs are the perfect quick and easy low carb game day appetizer. Can you tell I've got football on the brain? Actually, they are perfect for any event, party, get together, or even the idle Tuesday night at home.
What I like most about these keto buffalo chicken meatballs is that they have all the delicious flavors of buffalo wings, but without all the mess. Better yet, they are baked and not fried, making them a much healthier option.
These low carb meatballs are bursting with flavor. The combination of buffalo wing sauce and creamy blue cheese crumbles are a match made in heaven. I love to serve these with a side of celery sticks and my Creamy Chive Blue Cheese Dressing. If you are not a fan of blue cheese, try making these meatballs with feta cheese instead and serving it with my Keto Avocado Ranch Dressing.
If you would like to make these keto buffalo chicken meatballs in the slow cooker, simply form them into meatballs, line them in the bottom of a slow cooker and pour the sauce over top. Cook them on low for 3 hours.
Keto meatballs are one of my favorite things to make during my weekly meal prep. They reheat well, are portable and they are quick and easy to make. Here are a few of my favorite low carb meatball recipes - Keto Sausage Balls, White Cheddar, Sun-Dried Tomato and Avocado Stuffed Meatballs, Tomato Dijon Turkey Meatballs, and Chicken Parmesan Meatballs

Too bad, I've had this "pinned" for awhile to try them out and just came to get the ingredients and now you have to buy the cookbook :0( Even if I had tried them before and loved them I wouldn't be able to make it since I save paper and ink by reading recipes from Pinterest as I cook them.

I made these tonight and put them in a low carb wrap with green onions, lettuce, and side of carrots. They were delicious!

These were spectacular, thank you! I ended up using ground turkey just because the ground chicken was more difficult to come by. Resulting meatballs were delicious and I almost regretted the act of dousing them in buffalo sauce because it masked the medley of flavors within. This is, of course, a good problem to have, but I definitely wanted to review and say thank you for adding this to my repertoire in the kitchen!

Could these be made without the blue cheese? I really don't like blue cheese LOL

I bet these would be good as patties too!

I just made these and they are delicious! I was concerned the meatballs not binding, so I added an egg and maybe 3/4 cup breadcrumbs. Mine were really sticky (before and after the adjustment) and I couldn't roll them so they were more mounds. Very yummy though!

I guess you could use any baking dish really. I just always feel like I get a more even cook with glass bakeware.
Cathy says
They make me hungry just looking at them. Why a glass dish? I would be afraid to use a glass dish at 400 degrees. I can't wait to try these.

I routinely cook in those glass dishes at 450...The only time you'll have a problem is if you take the hot glass pan out and put it on a wet counter....It will instantly crack....I even had one semi explode one time....The old 1970's pyrex and Corningware was different and didn't do that....The new stuff is crap.....

The glass pan.is for serving/photo. The instructions say a baking sheet. Metal.
