    Ingredients

    Scale

    For the meatloaf

    • 2 pounds ground chicken
    • 1 cup Three Cheese Garlic Marinara Sauce, divided
    • 4 cloves garlic, minced
    • 2 tablespoons chopped fresh Italian flat leaf parsley
    • 2 teaspoons Italian seasoning
    • 2 teaspoons onion powder
    • 1 ½ teaspoon sea salt
    • ½ teaspoon black pepper

    For the filling and the topping

    • ½ cup full fat ricotta cheese
    • 1 cup shredded mozzarella cheese, divided
    • 1 cup shredded Parmesan cheese, divided
    • 2 tablespoon chopped Italian flat leaf parsley
    • 2 teaspoons chopped fresh chives
    • 1 clove garlic, minced
    • ½ teaspoon sea salt


    Instructions

    1. Preheat oven to 400°F
    2. In a large mixing bowl, combine the ground chicken, ¼ cup of marinara sauce, garlic, parsley, Italian seasoning, onion powder, sea salt and black pepper. Divide the mixture into 2 equal portions.
    3. In a separate mixing bowl, combine ricotta cheese, ½ cup mozzarella cheese, ½ cup Parmesan cheese, parsley, chives, garlic and sea salt. Mix until all ingredients are combined.
    4. Put half of the meat mixture into the bottom of a 9.25 x 5.25 x 2 ¾ loaf pan. Press evenly into the pan, reaching all the way to the corners.
    5. Make a groove down the center of the meat. Layer the cheese filling down the center.
    6. Top with the second half of the meat mixture, spreading evenly across the pan and pressing down into the bottom layer. Bake for 20 minutes.
    7. Remove the meatloaf from the oven and top with ¼ cup of marinara sauce and remaining mozzarella and Parmesan cheese.
    8. Return to the oven and bake for an additional 20 minutes.
    9. After slicing the meatloaf, top each slice with the remaining marinara sauce.

      Love this recipe, my hunny is really getting into chicken these days, thank goodness! Just to pass along, If your in a real pinch for time on a weeknight I used a bottle of RAO"S homemade vodka sauce last night just to use up the rest of the jar (I'm Italian but it is the one sauce I will buy that we love for a super quick meal) it was still delicious. He adored the flavor of the meat mixture and it was very moist. I plan to make it exactly as you wrote it but I just wanted to share that I cheated a little last night and dinner was still very successful. He has already asked me to make it next week as written and I plan to! Thank you, quite delicious

      I have made this a few times very good. The first time I made it i accidentally got ground turkey instead of ground chicken but I must say my family likes it with the ground turkey better.. I like both so i alternative each time I make it.

      OMG, I messed up, and it was STILL delicious! I accidentally put the entire cheese mixture in the middle. I realized it too late as I had already placed it in the over. I cooked it an extra 5 minutes, then took it out, topped it with a 1/4 cup marinara the a enough mozzarella and parmesan to cover the loaf, then I put it back in for the remaining 15. The bottom of the loaf appeared a little pink, so I covered it with foil and cooked for another 8. While it was still delicious, the additional juices were the saving grace.

      Absolutely will make this AGAIN, and AGAIN, and AGAIN!

      Do use ground chicken breast or ground chicken (93% lean)?

        I am buying ground chicken, but you can certainly ground your own chicken breasts in a food processor That would work too.
