Stuffed Chicken Parmesan Keto Meatloaf
- Total Time: 1 hour
- Yield: Makes 8 Servings 1x
Ingredients
For the meatloaf
- 2 pounds ground chicken
- 1 cup Three Cheese Garlic Marinara Sauce, divided
- 4 cloves garlic, minced
- 2 tablespoons chopped fresh Italian flat leaf parsley
- 2 teaspoons Italian seasoning
- 2 teaspoons onion powder
- 1 ½ teaspoon sea salt
- ½ teaspoon black pepper
For the filling and the topping
- ½ cup full fat ricotta cheese
- 1 cup shredded mozzarella cheese, divided
- 1 cup shredded Parmesan cheese, divided
- 2 tablespoon chopped Italian flat leaf parsley
- 2 teaspoons chopped fresh chives
- 1 clove garlic, minced
- ½ teaspoon sea salt
Instructions
- Preheat oven to 400°F
- In a large mixing bowl, combine the ground chicken, ¼ cup of marinara sauce, garlic, parsley, Italian seasoning, onion powder, sea salt and black pepper. Divide the mixture into 2 equal portions.
- In a separate mixing bowl, combine ricotta cheese, ½ cup mozzarella cheese, ½ cup Parmesan cheese, parsley, chives, garlic and sea salt. Mix until all ingredients are combined.
- Put half of the meat mixture into the bottom of a 9.25 x 5.25 x 2 ¾ loaf pan. Press evenly into the pan, reaching all the way to the corners.
- Make a groove down the center of the meat. Layer the cheese filling down the center.
- Top with the second half of the meat mixture, spreading evenly across the pan and pressing down into the bottom layer. Bake for 20 minutes.
- Remove the meatloaf from the oven and top with ¼ cup of marinara sauce and remaining mozzarella and Parmesan cheese.
- Return to the oven and bake for an additional 20 minutes.
- After slicing the meatloaf, top each slice with the remaining marinara sauce.

Making this for dinner tonight! A little secret on ground chicken - you can throw chicken breasts into a food processor or good blender (I use a ninja) and make your own ground chicken!

S is high-fat protein, E is high-carb protein, and FP is low-fat AND low-carb protein. While chicken breast is very FP, the cheese mix in the recipe will probably make it an S meal. Most low-carb recipes will be S, as this way of eating cuts almost all carbs out and lets your body use fats as fuel instead.
(this is in reference to the Trim Healthy Mama way of eating.)

I just made this tonight using 1 pound of ground chicken. I kept the ingredients the same except I did cut back on the salt. I love the taste and aroma of fresh garlic so kept amount the same 4 gloves. This dish was so delicious and savory and cheesey with the ricotta cheese adds to it.

Could you use shredded chicken I wonder? I was almost thinking I could put chicken in the crockpot in the morning and then shred it when I get home from work and then make it. Do you think that would work? I am very excited to try this recipe sounds so tasty!

Shredded chicken wouldn't stay together in loaf form. However, Im sure you could do some yummy crock pot variation using the shredded chicken

I'm pretty sure you could do a de-constructed version of this dish with shredded chicken. Just put all of the ingredients together like a casserole and bake it in the oven for a similar amount of time/temp. I find myself doing that a lot lately due to age and physical limitations.

I was getting ready to make this last night, my 10 year old son asked what we were having, I told hi, Chicken Parmigiana Meatloaf, he got so excited about it, he hugged me and told me I was the best! He asked if he could help me make it. We had so much fun cooking together, he measured out all the ingredients, mixed it with the ground chicken, helped me make the 5 cheese marinara, (which was fabulous)! It came out great, and they were fighting about who was going to get the leftovers the next day for lunch! LOL! Thanks for the great recipes! And we made great memories cooking together!
