Converting to Stovetop
Converting this Chicken Fajita soup recipe to stovetop is easy. Simply heat a little olive oil in a large dutch oven or stockpot and sauté the veggies until they are tender. Cut the chicken into bit-sized pieces and add it to the pot with the veggies. Add the herbs and spices and sauté until the chicken is cooked through. Add the chicken stock and let simmer for 30 to 40 minutes. You will have dinner on the table in no time.

Chicken Fajita Soup – Low Carb, Paleo, Gluten Free

Ingredients
- 1 ½ pounds boneless, skinless chicken breast or thighs (I get my organic, free range chicken here)
- 32 ounces chicken stock
- 14.5 oz can fire roasted diced tomatoes
- 1 medium yellow bell pepper, diced
- 1 medium orange bell pepper, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 tablespoons Taco Seasoning (get the recipe here)
- 2 tablespoons fresh cilantro, chopped
- 2 teaspoons sea salt, more to taste
Instructions
- Heat slow cooker on low setting.
- Add all ingredients to slow cooker, cover and cook on low for 6 hours.
- Using two forks, shred the chicken breasts. They should come apart very easily. Cover and cook 2 additional hours.

Made this abs I substituted the tomatoes for roasted bell peppers and ran them they the food processor. My chemo won’t let me eat acid foods as it causes mouth sores so I substitute any tomato products with the roasted bell peppers .

Made this for New Years Eve dinner last night and it was wonderful!! Looking forward to having it for dinner to night as well! My only wish is a more complete nutrition list that also contains Sugars and Saturated Fat amounts since I am doing Weight Watchers and I cant calculate points accurately without that information. I just came across your website. As I am a Type 1 diabetic and have to take insulin, I wonder if you could also post the total carbs as well as net carbs. I have to use total carbs for insulin, although it's good to know the net carbs as well.

Total carbs are listed as 6.7 carbs. Fiber is 1.7 which makes net carbs 5.0. What you want is total carbs and it is there, 6.7
