    Chicken Fajita Soup - whole30, keto, gluten free

    This whole 30 Chicken Fajita Soup has all the flavors of sizzling fajitas, but in a warm and comforting slow cooker soup recipe. Jazz it up and top it with cheese, sour cream, avocado, cilantro, or even tortilla strips.

    Ingredients

    • chicken
    • chicken stock
    • fire roasted tomatoes
    • yellow bell pepper
    • orange bell pepper
    • onion
    • garlic
    • Taco Seasoning
    • cilantro
    • sea salt

    Substitutions and Serving Suggestions

    • Make it with ground chicken, ground beef, or ground turkey I get all of my grass-fed, grass finished beef, heritage pork, organic chicken and sustainable seafood here
    • Use a precooked rotisserie chicken
    • Make it with steak or shrimp
    • Add in some of this Cilantro Lime Cauliflower Rice
    • Serve it on top of some Mexican Cauliflower Rice
    • Add 1 cup of heavy cream and 1 cup of shredded sharp cheddar for a rich and creamy variation
    • Add wild mushrooms, or any of your other favorite vegetables
    • Add cooked white rice or cauliflower rice
    • Add a can of black beans
    • Have leftover holiday turkey? Use that in place of the chicken
    • If you aren't looking to keep this low carb, top it with corn tortilla strips
    • Top it with fresh avocado, sour cream, cilantro, and Pickled Jalapeños

    Converting to Stovetop

    Converting this Chicken Fajita soup recipe to stovetop is easy. Simply heat a little olive oil in a large dutch oven or stockpot  and sauté the veggies until they are tender. Cut the chicken into bit-sized pieces and add it to the pot with the veggies. Add the herbs and spices and sauté until the chicken is cooked through. Add the chicken stock and let simmer for 30 to 40 minutes. You will have dinner on the table in no time.

    Ingredients

    Units Scale
    • 1 ½ pounds boneless, skinless chicken breast or thighs (Click HERE to get FREE steak, chicken, or ground beef for a year)
    • 32 ounces chicken stock
    • 14.5 oz can fire roasted diced tomatoes
    • 1 medium yellow bell pepper, diced (Click HERE to get up to 40% off produce)
    • 1 medium orange bell pepper, diced
    • 1 medium onion, diced
    • 4 cloves garlic, minced
    • 4 tablespoons Taco Seasoning (get the recipe here)
    • 2 tablespoons fresh cilantro, chopped
    • 2 teaspoons sea salt, more to taste

    Instructions

    1. Heat slow cooker on low setting.
    2. Add all ingredients to slow cooker, cover and cook on low for 6 hours.
    3. Using two forks, shred the chicken breasts.  They should come apart very easily.  Cover and cook 2 additional hours.

      Made this abs I substituted the tomatoes for roasted bell peppers and ran them they the food processor. My chemo won’t let me eat acid foods as it causes mouth sores so I substitute any tomato products with the roasted bell peppers .
      This recipe is great I did top it with cheese and sour cream so good

      I plan to make this recipe with already boiled chicken. I need recipes to use up cooked chicken after making chicken broth with a whole chicken.

      Made this for New Years Eve dinner last night and it was wonderful!! Looking forward to having it for dinner to night as well! My only wish is a more complete nutrition list that also contains Sugars and Saturated Fat amounts since I am doing Weight Watchers and I cant calculate points accurately without that information. Thanks again for a great recipe!

      Your site includes so many recipes which look wonderful but, without knowing the amount of carbs in each one, it's impossible to determine whether these fit within my program. It would be considerably more effective if you include the total carbs in each recipe, Thanks!

      I just came across your website. As I am a Type 1 diabetic and have to take insulin, I wonder if you could also post the total carbs as well as net carbs. I have to use total carbs for insulin, although it's good to know the net carbs as well.

        Total carbs are listed as 6.7 carbs. Fiber is 1.7 which makes net carbs 5.0. What you want is total carbs and it is there, 6.7
