Converting this Chicken Fajita soup recipe to stovetop is easy. Simply heat a little olive oil in a large dutch oven or stockpot and sauté the veggies until they are tender. Cut the chicken into bit-sized pieces and add it to the pot with the veggies. Add the herbs and spices and sauté until the chicken is cooked through. Add the chicken stock and let simmer for 30 to 40 minutes. You will have dinner on the table in no time.

Ingredients
- 1 ½ pounds boneless, skinless chicken breast or thighs (I get my organic, free range chicken here)
- 32 ounces chicken stock
- 14.5 oz can fire roasted diced tomatoes
- 1 medium yellow bell pepper, diced
- 1 medium orange bell pepper, diced
- 1 medium onion, diced
- 4 cloves garlic, minced
- 4 tablespoons Taco Seasoning (get the recipe here)
- 2 tablespoons fresh cilantro, chopped
- 2 teaspoons sea salt, more to taste
Instructions
- Heat slow cooker on low setting.
- Add all ingredients to slow cooker, cover and cook on low for 6 hours.
- Using two forks, shred the chicken breasts. They should come apart very easily. Cover and cook 2 additional hours.

I’m so excited to be getting into soup season! This will be my 4th year making this and it’s been my go to for kicking off the season. I cheat and use a rotisserie chicken so I don’t have to wait as long and I always top it off with Labne. Whoever I share it with always loves it.

This recipe is awesome. I've made it several times for just my wife and I as well as for family. It is always a hit. My wife loves that it isn't spicy and I love mine kicked up a few notches with hot sauce, but we can both agree on making it regardless.
