    Ingredients in Reuben Chopped Salad

    Ingredients for Reuben Chopped Salad - romaine, corned beef, sauerkraut, caraway, chives

    Ingredients Notes

    • Corned beef: you can't make a Reuben salad without corned beef! While you can get corned beef in store, I also have a sugar free corned beef recipe to keep the carbs low.
    • Sauerkraut: another classic component of a Reuben, sauerkraut adds a salty and sour element with a nice layer of crunch that compliments the roast beef and Swiss cheese. (Check out this Creamy Reuben Soup recipe)
    • Caraway seeds: since this is a Reuben salad and not a sandwich, caraway adds the flavor of rye bread without the gluten or carbs.
    • Swiss cheese: while you could use another cheese, nothing is more classic than Swiss cheese. It adds a nice creamy element with a bit of a nutty flavor.

    How to make Reuben Chopped Salad

    STEP 1: Divide chopped romaine evenly between four bowls.

    STEP 2: In a large bowl, add corned beef, Swiss cheese and sauerkraut. Mix to combine.

    STEP 3: Divide mixture among the four plates of lettuce.

    STEP 4: Sprinkle caraway seeds and chives over top of each plate.
    Serve with Russian dressing.

    Recipe Tips and Variations

    • Storage: store leftovers, undressed, in the fridge for up to 3 days.
    • Serving suggestion: Double down on the Reuben flavors and serve with Reuben Stuffed Mushrooms or Creamy Reuben Soup. This recipe also pairs well with Portobello Cordon Bleu with Dijon Cream Sauce.
    • Up the protein: Add a bit more protein and serve with grilled chicken, or even pile shredded pork on top.
    • Make it a Rachel: swap the corned beef for turkey or pastrami, and switch out the sauerkraut for coleslaw. This is what's done in a Rachel sandwich, a different take on the classic Reuben, and it works great in this chopped salad!

      This salad is AMAZING! My husband loves it too and he's not dieting! I prep lunches for the week and pack the meat, sour kraut and caraway seeds in a small baggie - the dressing in a small container and pack both of those on top of the salad. The salads will last several days in the fridge that way without the lettuce getting soggy.

      Has anyone had success using a combo of light mayo and ff greek yogurt for the dressing? I am trying to eat low carb, but lower fat as well.

      Made this for dinner, delicious! However after finding the macros for this there is nothing really low carb about it. Kind of disappointed and feeling like I was lied to.

Also, with the salad and with the dressing it comes in at less than 6 carbs per serving. If that isn't low carb enough for you, I am guessing that my site is probably not a good fit for you.
