Description
These Low Carb Nachos have deliciously crunchy keto chips, made entirely of cheese and spices. The chips are piled high with seasoned ground beef, olives, tomatoes, jalapeños, guacamole, onions, and cilantro. The are the perfect addition to your keto taco Tuesday.
Ingredients
- 2 cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ¼ teaspoon chili powder
- 1 cup cooked taco seasoned ground beef
- ¼ cup shredded sharp cheddar cheese
- 2 tablespoons chopped onions
- ¼ cup diced tomatoes
- ¼ cup jalapenos
- ¼ cup sliced black olives
- 2 tablespoons guacamole (get my recipe here)
- 2 tablespoons sour cream
Instructions
- Preheat the oven to 400°F.
- Line a rimmed baking sheet with parchment paper or a silicone baking mat.
- Sprinkle the cheddar cheese on the parchment paper in a thin layer, in the shape of a rectangle.
- Sprinkle the Parmesan cheese evenly over top of the cheddar cheese.
- In a small mixing bowl, combine the cumin, garlic powder, and chili powder. Sprinkle the seasoning mix evenly over the top of the cheeses.
- Bake on the middle rack for 8 to 10 minutes, checking every minute to ensure that it does not burn.
- Remove the baking sheet from the oven and let the cheese cool for 10 minutes.
- Peel the cooked cheese away from the parchment paper and cut lengthwise into strips. To make this easier, I recommend using a pizza cutter or kitchen shears. After cutting the cheese into strips, then cut each strip into triangles.
- Transfer the individual chips back to the parchment paper and broil on high for 1 to 2 minutes.
- Let the chips cool and crisp up - about 30 minutes.
- Pile the chips on a plate and cover with all of your favorite nacho toppings.

Thank you for another great low carb option! My family has made the low carb lifestyle change. I did ,however leave the "chips" in the broiler a little too long. But for the first time, and after scraping a little of the burn off it was a big hit. I have lost 11lbs since starting this journey, with great recipes like this we have options and there's no turning back. Thank you again!

Hi! I just wanted to thank you so much for posting these recipes! I recently started low carb (which I've done umpteen times before) and stumbled across this blog thanks to Pinterest. I made these nachos and they are the BOMB! I've also made the chicken wings, the greek pizza, and tonight I made the turkey taco soup. I have 5 children ages 2-18 and they ALL LOVED IT! I feel like a cloud has lifted! Everyone has LOVED everything I've made and I feel like I may actually be able to lose weight! I have a long way to go but I've lost 10 pounds in a week eating nachos and pizza! Oh also those little chocolate pudding bites! SO GOOD! THANK YOU SO MUCH!

I would be curious about longevity as well. These would be something I would be interested in taking to work for lunch!!

Although I am pretty sure they get eaten right away, has anyone tried making them in bulk and storing them? Do they hold up ok?

Just tried these - Love them! Thanks!! I am wondering about making taco shell size rounds, then baking them the second time folded over something into a taco shell shape... 🙂 Has anyone tried?

I saw a pic of someone molding them over the handle of their oven ( after cleaning of course!)-so creative!

Looks great! I have been frying grated cheese for a while now which gets them nice and crispy and I sprinkle them on my salads instead of croutons! YUM! Can't wait to try them as nachos!
