    These Keto Nachos have deliciously crunchy keto chips, made entirely of cheese and spices. The chips are piled high with seasoned ground beef, olives, tomatoes, jalapeños, guacamole, onions, and cilantro. The are the perfect addition to your keto taco Tuesday.

    Description

    These Low Carb Nachos have deliciously crunchy keto chips, made entirely of cheese and spices. The chips are piled high with seasoned ground beef, olives, tomatoes, jalapeños, guacamole, onions, and cilantro. The are the perfect addition to your keto taco Tuesday. 


    Ingredients

    Scale
    • 2 cups shredded sharp cheddar cheese
    • ½ cup grated Parmesan cheese
    • 1 teaspoon cumin
    • ½ teaspoon garlic powder
    • ¼ teaspoon chili powder
    • 1 cup cooked taco seasoned ground beef
    • ¼ cup shredded sharp cheddar cheese
    • 2 tablespoons chopped onions
    • ¼ cup diced tomatoes
    • ¼ cup jalapenos
    • ¼ cup sliced black olives
    • 2 tablespoons guacamole (get my recipe here)
    • 2 tablespoons sour cream


    Instructions

     

    1. Preheat the oven to 400°F.
    2. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
    3. Sprinkle the cheddar cheese on the parchment paper in a thin layer, in the shape of a rectangle.
    4. Sprinkle the Parmesan cheese evenly over top of the cheddar cheese.
    5. In a small mixing bowl, combine the cumin, garlic powder, and chili powder. Sprinkle the seasoning mix evenly over the top of the cheeses.
    6. Bake on the middle rack for 8 to 10 minutes, checking every minute to ensure that it does not burn.
    7. Remove the baking sheet from the oven and let the cheese cool for 10 minutes.
    8. Peel the cooked cheese away from the parchment paper and cut lengthwise into strips. To make this easier, I recommend using a pizza cutter or kitchen shears. After cutting the cheese into strips, then cut each strip into triangles.
    9. Transfer the individual chips back to the parchment paper and broil on high for 1 to 2 minutes.
    10. Let the chips cool and crisp up - about 30 minutes.
    11. Pile the chips on a plate and cover with all of your favorite nacho toppings.

    • Cook Time: 30 minutes

      The wait time for the chips crisping up is killing me!!! I just started a low carb diet about three weeks ago and nachos are my favorite thing. I can't wait to try them

      This is a great low carb version of nachos, and to anyone who says its unhealthy, any thing is unhealthy if you eat enough of it. count those calories and watch your serving sizes

        People don't get fat because they eat too many calories; they eat too many calories because they need to feed their fat! Low carb diets are a great way to help your body release it's fat stores!

      onthehighseas - I am always looking to create favorite comfort foods into a low carb version. While I recognize that if you ate the whole plate of cheese chips it may not be what most people deem "healthy" BUT.. it is low carb and people living a low carb lifestyle are primarily concerned with the carb count as well as eating foods that will help them stay on plan and not feel deprived. Also, it is 4 servings and I'm sure that even though the chips are made of cheese, the dish probably still has a lot less cheese that a plate of nachos at a bar. Thanks for stopping by! Cheers!

        Holley is right and we generally watch carbs AND calories so our diets are more healthy, not less. When I do my low carb pizza (which is a crust made with eggs and cheese and then topped with cheese and meat) I am usually under 1000 calories for the day because it's so filling I can barely bring myself to eat anything else.

        Well said! When you do low carb properly, it doesnt matter how many fat calories you consume. Your body burns the fat for energy so it is not detrimental to your health. Your body does not store the fat at all. I hate when people pass judgement on what they dont understand. 🙁

      the nacho's look really tastey but chips made completely of cheddar and parmesan cheese? that's so far from healthy, who cares if they're low in carbohydrates?

        Key word is "keto" it's a high fat low carb diet and cheese is the main component of the diet.

        Ever heard of the keto diet??? This recipe is exactly what is approved for th3 keto Diet! FYI....fat IS healthy for you! Fat burns fat but if you eat carbs with your fat then your body will go straight to the carbs FIRST to burn for fuel, leaving the fat in your body’s. I lost 12 pounds in 3 weeks and 2 inches off my waist so far on keto, love this recipe!,!
