    This quick and easy Lemon Caper Aioli recipe is fresh and light and comes together in less than 5 minutes. Aioli is pretty much the perfect condiment. It goes well with just about everything - on burgers, as a dip for fries, on roasted vegetables, on seafood, with steamed artichokes, you name it.

    Ingredient Notes

    Ingredients in homemade aioli

    • Mayonnaise: While true homemade aioli starts with an emulsification of oil, garlic, salt and egg, I used mayonnaise as a base to make this a quick and easy keto aioli recipe. (more homemade condiment and dressing recipes)
    • Dijon mustard: The Dijon mustard in this recipe adds a nice tang. You can also use stone ground mustard or spicy brown mustard.
    • Lemon juice: The lemon juice adds a burst of fresh acidity and balances out the intensity of the garlic and onion.
    • Garlic: When it comes to aioli, garlic is the star of the show. If you ask me, the more garlic the better.
    • Onion powder: The onion powder adds a little extra savory flavor to this aioli recipe. If you do not have onion powder, you can also add some dried minced onion.
    • Capers: I love adding capers to my aioli. They add the perfect amount of brininess.

    How to make lemon caper aioli

    STEP 1: In a mixing bowl, combine the mayonnaise, garlic, Dijon, lemon juice, onion powder, capers, salt and pepper.

    STEP 2: Mix until all the ingredients are well incorporated. Refrigerate for 1 to 2 hours before serving.

    Recipe Tips and Variations

    • Storage: Store in an airtight container in the fridge for up to 2 weeks. (be sure to check the expiration date on the condiments you use to make this) These are my favorite condiment jars and lids.
    • Spice it up: Add a little bit of pure horseradish root to make a spicy version.

    What is aioli? How is it different than mayonnaise?

    True aioli is an emulsion of garlic, olive oil, and salt. Over time things like egg, mustard, and lemon have been added to help with the emulsification process. While similar to a mayo in that there is egg emulsified with oil to make a creamy sauce, they are still different. Aioli is traditionally made with olive oil, while mayonnaise is made with a lighter more neutral oil, giving them distinctly different flavors.

    Is this recipe a true aioli?

    Not in the traditional sense. This recipe utilizes mayonnaise as a base to make it a quick and easier version of aioli - all of the flavor with less work.

    This quick and easy Lemon Caper Aioli recipe is fresh and light and comes together in less than 5 minutes. Aioli is pretty much the perfect condiment.       Omg! This stuff is delicious! It does flavor out very nice after a few hours in fridge. BUT the next day it’s even better! I made it to go with the artichokes recipe and it’s the perfect dipping sauce for them! Can’t wait to try this with French fries and everything else!

      This is an amazing dip, it's so good with steamed artichokes, it's so savory! I have used it with chicken, fish cakes, and other vegetables too. I should confess, that I made it without capers, not intentionally, but when I dug the little jar out from the back of my fridge, the capers were a little past their prime and had to be omitted. But I loved it so much, that I have kept making it that way.
