How to make the best keto bread recipe
STEP 1: Put an oven rack in the lower third position. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat. In a large bowl, mix the almond flour, psyllium husk powder, nutritional yeast, baking powder, and salt until there are no visible clumps. (more keto bread recipes)
STEP 2: Add the egg whites and vinegar to the bowl.
STEP 3: Using a rubber spatula, mix while slowly pouring in the hot water. Continue to mix just until the ingredients are well combined; be careful not to overmix the dough.
STEP 4: Moisten your hands and divide the dough into 4 equal parts, then shape them into hamburger-sized buns. Put the buns on the lined baking sheet. Sprinkle the bagel seasoning over the tops of the buns. Bake for 50 minutes to 1 hour, until the buns have doubled in size, are crisp on top, and make a hollow sound when you thump them. Allow to cool before slicing.

Frequently Asked Questions
Blanched almond flour is made with almonds that have had the skins removed. As a result, it is lighter and fluffier and works better in baking.
The psyllium husk in this recipe is an essential ingredient and I do not recommend any substitutions.
While I recommend using fresh egg whites, carton egg whites will also work in a pinch.
Some brands of psyllium husk powder will result in purple rolls. To avoid this, I recommend using this brand.

This is the Keto Everything Bun recipe from my book Dairy Free Keto Cooking. We use this base keto bread recipe for everything - from keto hamburger buns, to sandwich and sub rolls, to low carb hot dog buns, avocado toast and even keto croutons. It is incredibly versatile and satisfies even the toughest of bread cravings.
Ingredients
- 1 ¼ cups blanched almond flour (I use this brand)
- ¼ cup plus 2 teaspoons psyllium husk powder (I use this brand)
- 2 tablespoons nutritional yeast (I use this brand)
- 2 teaspoons baking powder
- ½ teaspoon sea salt
- 3 large egg whites
- 2 teaspoons apple cider vinegar
- 1 cup hot water
- 2 tablespoons Everything Bagel Seasoning (get the recipe here)

Notes

- Storage: I recommend wrapping this keto bread recipe in paper towels and then in foil and storing them on the counter.
- Freezing: I like to make a double or triple batch and freeze them for later. When I am ready to use them, I set them out on the counter to thaw.
- Make ahead: To make this recipe even easier, I like to pre-mix several batches of the dry ingredients and store them in my pantry in air-tight containers.
- Seasonings: In place of the everything bagel seasoning, these are also delicious with sesame seeds, poppy seeds, or even plain.
- Psyllium Husk Powder: Some brands of psyllium husks will turn these rolls purple. To avoid this, I recommend using the brand Now Foods.

I don’t know who needs to know this, but as there seems to be a psyllium husk POWDER shortage right now, I ordered psyllium husk, and tried grinding it myself. Even using the ninja, I couldn’t grind it as fine as the powder. I used 1/4 cup, but it wasn’t enough by weight, and did not turn out. Now I know to measure out about 34 grams. Hopefully it will work next time!

So... I really wanted to make these so found psyllium husk powder at the grocery. It took me a min to find it but yeah, it's fiber powder lol. Lol and behold, mixing it all up and get a distinct orange scent. Oops, I got the flavored stuff 🤣 still taste good and might make them again but just least the nutritional yeast out!

Love this recipe! I finally have easy, tasty rolls! I make and freeze so I can take one out as I need it. I microwave briefly then put it in the airfreight to crisp it up! Perfect! However, my only question is, tho I use NOW psyllium powder as you suggest, the rolls are still purple. I really don't care bc they're delish. But it gives non keto husband a reason to doubt! LOL! Please let me know what I'm doing wrong.

Ok, I’m now obsessed with this bread. Frickin AMAZING! I am so happy right now. Not only did they taste great, they came out totally gorgeous. I felt like I had bought some gorgeous bread from a fancy bakery. I enjoyed my first one as the bread for a spicy curry chicken salad sandwich. So good! Question. Have you ever made this in different versions, like maybe something sweet or savory like focaccia style? I can see the options are limitless. I will definitely be making these every week. Thank you!

I tried this recipe as buns and fell in love with it. Tonight I used a 9x13 pan and spread the entire batter with everything bagels sprinkled on top. My plan was to use it as a flatbread and add some my vegetables from my garden. I baked it for 30 min and it was superb! You can’t go wrong with this recipe!!

I made these last night to serve with a decadent pork/chorizo burger. The burgers were fantastic, but the buns stole the show. Never would I have thought to be able to recreate a decent hamburger bun on keto. These were simply outstanding. I'm so glad I tried them. I've experimented with other keto breads and they all seem to be the same. I'm super pleased they didn't contain any cheese. Well done!

Hi Kyndra! Thank you very much for this recipe. I live at 5200' altitude and am wondering if you have any insight into changes I'd need to make. I made a batch last week and made sure to bake until they were really well browned to avoid the goo I end up with similar recipes. The top 2/3 of the rolls were amazing (progress!!), but the bottom thirds were very dense. I thought I'd try raising the temp 25 degrees and lowering to the very bottom rack. Anything else you can think of?

These were so amazing and easy to make! I was craving a burger and totally not feeling a lettuce wrap so after having this saved for months I decided to give it a try and was not disappointed. Used it for turkey caprese burgers one day and for breakfast sandwiches the next day. My roommate gave her seal of approval too!
