    Giving credit where credit is due - This keto bread recipe is my take on the famous Diet Doctor Rolls, which were actually an original recipe from Maria Emmerich. I made a few tweaks and changes to put my own delicious spin on things.

    • Blanched almond flour: For this recipe I recommend using a blanched almond flour, or a super fine almond flour. It will give this keto bread recipe a better texture.
    • Psyllium husks: Psyllium husk can be a tricky ingredient to work with as not all brands are created equal. In fact, some brands will turn these keto sandwich buns purple. Here is the brand of psyllium husk powder that I recommend.
    • Egg whites: The egg whites help provide structure and strength to dough for this low carb bread recipe.
    • Nutritional yeast: The addition of nutritional yeast in this recipe gives this keto bread recipe a slightly cheesy flavor. It is similar to the flavor that Parmesan cheese would add. This is the brand that I use.
    • Everything bagel seasoning: While this used to be a hard ingredient to find, you can now find it in stores everywhere. However, I like to make my own. Check out my Everything Bagel Seasoning Recipe. (If you don't want to make it, here is my favorite store-bought brand).

    How to make the best keto bread recipe

    STEP 1: Put an oven rack in the lower third position. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat. In a large bowl, mix the almond flour, psyllium husk powder, nutritional yeast, baking powder, and salt until there are no visible clumps. (more keto bread recipes)

    STEP 2: Add the egg whites and vinegar to the bowl.

    STEP 3: Using a rubber spatula, mix while slowly pouring in the hot water. Continue to mix just until the ingredients are well combined; be careful not to overmix the dough.

    STEP 4: Moisten your hands and divide the dough into 4 equal parts, then shape them into hamburger-sized buns. Put the buns on the lined baking sheet. Sprinkle the bagel seasoning over the tops of the buns. Bake for 50 minutes to 1 hour, until the buns have doubled in size, are crisp on top, and make a hollow sound when you thump them. Allow to cool before slicing.

    Recipe Tips and Variations

    • Storage: I recommend wrapping this keto bread recipe in paper towels and then in foil and storing them on the counter.
    • Freezing: I like to make a double or triple batch and freeze them for later. When I am ready to use them, I set them out on the counter to thaw.
    • Note about the bagel seasoning: If you have a store-bought version that has really toasted minced garlic and onion, you may want to omit the seasoning or add it halfway through cooking so that it does not become burned or bitter.
    • Make a sandwich: Pile on some of my my Slow Cooker Keto Barbecue Pulled Pork to make a pulled pork sandwich.
    • Use the yolks: Don't let the egg yolks go to waste. Use them to make this delicious Homemade Hollandaise Sauce.
    • Make ahead: To make this recipe even easier, I like to pre-mix several batches of the dry ingredients and store them in my pantry in air-tight containers. Then, when I am ready to make this keto bread recipe, all I have to do is add the wet ingredients, mix, shape, and bake! I use these jars and these lids. They fit a full batch of the dry ingredients just perfectly.
    • Seasonings: In place of the everything bagel seasoning, these are also delicious topped with sesame seeds, poppy seeds, or even plain. (more homemade spice and seasoning blends)
    • Brush the top with butter and garlic: For a buttery, garlicky, keto sandwich roll, skip the bagel seasoning and brush the tops of the rolls with melted butter and sprinkle with a little bit of garlic powder. You can do this before baking, or during the last 5 minutes of baking.
    • Other uses: Shape them into hot dog buns, hamburger buns, dinner rolls, sub rolls, you name it! The possibilities are endless. I even like to toast them and use them in place of English muffins for eggs benedict. (check out my Eggs Benedict Casserole Recipe)

    Make an Epic Keto Breakfast Sandwich: Toast these buns and make keto avocado toast or a breakfast sandwich. I like to slather on some butter, grill the bun butter side down like you would a grilled cheese sandwich, and then top it with mashed avocado, sausage, goat cheese, a yolky egg with my Herby Everything Seasoning, pickled red onions, and microgreens.     Frequently Asked Questions

    What is blanched almond flour?

    Blanched almond flour is made with almonds that have had the skins removed. As a result, it is lighter and fluffier and works better in baking.

    What can I use in place of psyllium husks?

    The psyllium husk in this recipe is an essential ingredient and I do not recommend any substitutions.

    Can I use carton egg whites in place of fresh egg whites in a recipe?

    While I recommend using fresh egg whites, carton egg whites will also work in a pinch.

    Why did my buns turn purple?

    Some brands of psyllium husk powder will result in purple rolls. To avoid this, I recommend using this brand.

    Description

    This is the Keto Everything Bun recipe from my book Dairy Free Keto Cooking. We use this base keto bread recipe for everything - from keto hamburger buns, to sandwich and sub rolls, to low carb hot dog buns, avocado toast and even keto croutons. It is incredibly versatile and satisfies even the toughest of bread cravings. 


    Ingredients

    • 1 ¼ cups blanched almond flour (I use this brand)
    • ¼ cup plus 2 teaspoons psyllium husk powder (I use this brand)
    • 2 tablespoons nutritional yeast (I use this brand)
    • 2 teaspoons baking powder
    • ½ teaspoon sea salt
    • 3 large egg whites
    • 2 teaspoons apple cider vinegar
    • 1 cup hot water
    • 2 tablespoons Everything Bagel Seasoning (get the recipe here)


    Instructions

    1. Put an oven rack in the lower third position. Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
    2. In a large bowl, mix the almond flour, psyllium husk powder, nutritional yeast, baking powder, and salt until there are no visible clumps.

      I don’t know who needs to know this, but as there seems to be a psyllium husk POWDER shortage right now, I ordered psyllium husk, and tried grinding it myself. Even using the ninja, I couldn’t grind it as fine as the powder. I used 1/4 cup, but it wasn’t enough by weight, and did not turn out. Now I know to measure out about 34 grams. Hopefully it will work next time!
      I have made it many times using the powder, and am so thankful for this dairy-free recipe! Thanks, Kyndra!

      While there are many "Best" bread recipes out there, I found your recipe to be truly TERRIFIC! I followed your recipe exactly and got excellent results. Light and fluffy, yet sturdy enough for a good bite and chew. I will definitely be making double or triple batches on a regular basis. Thanks for providing me with a Best Bread Recipe!

      So... I really wanted to make these so found psyllium husk powder at the grocery. It took me a min to find it but yeah, it's fiber powder lol. Lol and behold, mixing it all up and get a distinct orange scent. Oops, I got the flavored stuff 🤣 still taste good and might make them again but just least the nutritional yeast out!

      Love this recipe! I finally have easy, tasty rolls! I make and freeze so I can take one out as I need it. I microwave briefly then put it in the airfreight to crisp it up! Perfect! However, my only question is, tho I use NOW psyllium powder as you suggest, the rolls are still purple. I really don't care bc they're delish. But it gives non keto husband a reason to doubt! LOL! Please let me know what I'm doing wrong.

        I've had the same problem twice and both times I used the Now brand. Mine was a brand new bag too. So glad the taste and texture is great. Any thoughts Kyndra??

      Ok, I’m now obsessed with this bread. Frickin AMAZING! I am so happy right now. Not only did they taste great, they came out totally gorgeous. I felt like I had bought some gorgeous bread from a fancy bakery. I enjoyed my first one as the bread for a spicy curry chicken salad sandwich. So good! Question. Have you ever made this in different versions, like maybe something sweet or savory like focaccia style? I can see the options are limitless. I will definitely be making these every week. Thank you!

      I tried this recipe as buns and fell in love with it. Tonight I used a 9x13 pan and spread the entire batter with everything bagels sprinkled on top. My plan was to use it as a flatbread and add some my vegetables from my garden. I baked it for 30 min and it was superb! You can’t go wrong with this recipe!!

      I made these last night to serve with a decadent pork/chorizo burger. The burgers were fantastic, but the buns stole the show. Never would I have thought to be able to recreate a decent hamburger bun on keto. These were simply outstanding. I'm so glad I tried them. I've experimented with other keto breads and they all seem to be the same. I'm super pleased they didn't contain any cheese. Well done!

      These are my absolute favorite Keto bread substitute. They come together quickly, are light and fluffy, taste delicious and I use them for everything. I don’t think I’ll ever try another Keto bread recipe!

      Hi Kyndra! Thank you very much for this recipe. I live at 5200' altitude and am wondering if you have any insight into changes I'd need to make. I made a batch last week and made sure to bake until they were really well browned to avoid the goo I end up with similar recipes. The top 2/3 of the rolls were amazing (progress!!), but the bottom thirds were very dense. I thought I'd try raising the temp 25 degrees and lowering to the very bottom rack. Anything else you can think of?

      These were so amazing and easy to make! I was craving a burger and totally not feeling a lettuce wrap so after having this saved for months I decided to give it a try and was not disappointed. Used it for turkey caprese burgers one day and for breakfast sandwiches the next day. My roommate gave her seal of approval too!
