There are a couple of ways to roast the jalapeños. If you have a gas range, you can roast them directly over the flame, turning them frequently so they do not burn. They are done when they are charred and slightly blistered. Alternatively, you can lay them on a baking sheet and put them under the oven broiler for 3 to 4 minutes.
If you are not a fan of mayo, or cannot have eggs, Greek yogurt makes a great substitution in this recipe. If you substitute with yogurt, I recommend omitting the vinegar.

Ingredients
- 2 ½ pounds boneless, skinless chicken breasts, cooked and cut into bite-sized pieces (I get all my organic, free-range chicken here)
- 6 slices bacon, cooked crisp and chopped
- ¼ cup chopped red onions
- 2 tablespoons chopped fresh chives
- 2 roasted jalapeños, seeded and sliced
- ½ cup mayonnaise (get my homemade recipe here)
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 teaspoon hot sauce, more to taste
- 1 teaspoon garlic powder
- ¼ teaspoon sea salt, more to taste
- ¼ teaspoon black pepper
- 2 batches Keto Everything Buns (optional for making sandwiches)
- romaine lettuce leaves (optional for making lettuce wraps)

This weekend a large family gathering is planned. You just solved what to bring. Since kids will be involved, I will soak the jalapenoe in 7-Up (not diet) for about 25 min to remove some of the heat. I will need to double this recipe but don't believe that will be a problem.
