The best cucumber salad recipe
One of my favorite parts about this time of year is all the summer salads. If you're craving a lighter alternative to the typical creamy cucumber salad, you've got to make this Greek salad recipe. Spiralized cucumbers, red onions, cherry tomatoes, and kalamata olives are drizzled with zesty Italian dressing and balsamic, then tossed with feta cheese, chopped salami, and fresh herbs. The most delicious way to chill out during a hot summer day when you don't want to cook anything.
Are cucumbers keto?
Cucumbers are a great option if you're trying to stay keto or low carb. One cup of cucumbers has 4g total carbs. Because they're 96% water, cucumbers are very low calorie and very hydrating. Cucumbers also contain lots of vitamins and minerals like vitamins C and K, magnesium, potassium, manganese, plus antioxidants from flavonoids, and tannins. You can replace the noodles in a chilled pasta dish so easily with cucumbers, whether you slice them or spiralize them. Cucumbers are also one of my favorite dippers to use in place of chips or crackers. When we are dining out at a restaurant and order something like spinach and artichoke dip or quest dip, I always ask for sliced cucumbers in place of the chips. They have such a great crunch!
How to use a spiral slicer:
This is my favorite spiral slicer - the company name is literally Spiralizer. I like this spiralizer because you just select your blade, load your veggie, and crank out the spirals. There are a bunch of other blades that come with your purchase, so you can make all different kinds of veggie slices. You could use this for my Low Carb Pickled Red Onions if slicing onions isn't your favorite. I like to spiralize the cucumbers in this recipe because they soak up my homemade low carb Greek salad dressing and still offer up a good crunch.

Keto Cucumber Greek Salad

Ingredients
- 2 cucumbers, spiral sliced
- 3 tablespoons Balsamic Shallot Vinaigrette, more to taste (get the recipe here)
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- ½ cup kalamata olives, pitted and halved
- 5 ounces crumbled feta cheese
- 12 slices dry salami, cut into thin strips
- 1 tablespoon finely chopped fresh mint
- 1 tablespoon finely chopped fresh dill
- cracked black pepper, to taste
