How to make fathead pizza dough
STEP 1: Preheat oven to 425°F. In a large microwave safe mixing bowl, combine the mozzarella and cream cheese. Microwave for 1 minute.
STEP 2: Remove from microwave and stir to combine. Return to microwave for 1 additional minute.
STEP 3: To the mixing bowl, add the egg, almond flour, garlic powder, onion powder, Italian seasoning, salt and pepper.
STEP 4: Mix until all ingredients are well incorporated.
How to make Bacon Cheeseburger Pizza
STEP 5: Line a 12 inch pizza pan with parchment paper. Spread the "dough" into a thin but even layer, covering the pizza pan. If the dough gets too stringy and unworkable, simply put it back in the microwave for 1 minute to soften.
STEP 6: Bake on the middle rack for 10-12 minutes or until golden brown. Watch it to make sure that it does not bubble up. Use a toothpick to pop any bubbles, if necessary.
STEP 7: To a skillet over medium heat, add the ground beef, onion, garlic, salt, and pepper.
STEP 8: Sauté until the ground beef is cooked through and the onions are soft. Drain any excess grease.

Ingredients
For the Crust
- 1 ½ cup mozzarella cheese, shredded
- 3 tablespoons cream cheese
- 1 large egg
- ¾ cup blanched almond flour (I use this brand)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 teaspoon sea salt
- ½ teaspoon black pepper
For the Toppings
- ½ cup low carb pizza sauce (get the recipe here)
- 2 teaspoons yellow mustard
- ½ pound ground beef
- 2 cloves garlic, minced
- ½ cup diced onion (about 2.5 oz)
- 4 slices bacon, cooked crisp and crumbled
- 15 dill pickles slices
- 1 ½ cups shredded cheese (I used a combination of sharp cheddar and mozzarella)
Instructions
For the Crust

Putting it all together
- Spread the pizza sauce evenly over the pizza crust.
- Top with half of these cheese.
- Pile on ground beef mixture.
- Top with remaining cheese, crumbled bacon and pickle slices
- Reduce the heat to 350°F and bake for an additional 10 minutes or until the cheese is melted and bubbly.

This looks amazing ! One question: In the picture, I see that you do the pre-baking of the crust on the parchment paper. However, when it goes back into the oven with all the toppings, it does not appear to have the parchment paper. Is it easy to slide off the parchment paper and will that help the bottom to crisp/brown up a little better? Thanks for all of your recipes. Really enjoy looking at them !

Finally made this this past Friday evening...I say finally because, while I've had this recipe in my "to do" stack, every time I would look at it the warm dill pickles just didn't sound good... I reminded myself that I have always been happy with your recipes...always delicious, and I can sneak them in to my significant other who resists this lifestyle. True to form and sure enough...this Bacon Cheeseburger Pizza was fabulous! I'm typically not a "changer" to recipes, but I did leave out the 1 tsp sea salt in the crust...I've learned over time that with all the cheese in some dishes, we don't like extra salt. Oh, and then, in my pack of bacon that I needed to use, I had 5 pieces...so, ummm, you can not go wrong with additional bacon, right?!? I'm actually wondering how long I need to wait to make it again!!
