    Ingredient Notes

    • Fathead pizza dough: The low carb pizza crust is made of a pretty traditional fathead dough - almond flour, cream cheese, mozzarella cheese, egg, and spices. For a nut free variation, try my Nut Free Keto Pizza Crust.
    • Pizza sauce: While there are many delicious store-bought pizza sauces, I prefer to make my own. That way I can control the ingredients and skip the additives. Try my Paleo Pizza Sauce Recipe. To give it that perfect cheeseburger condiment taste, I mix a little yellow mustard into the pizza sauce.
    • Ground beef: You can't really have a bacon cheeseburger pizza without the burger part! That being said, this is also delicious with ground turkey, chicken, or even bison. (more low carb ground beef recipes)
    • Onion and garlic: I like to cook the onion and garlic in with the ground beef to help them release their delicious flavors, but you can also just spread them over the top of the pizza before baking. If you are out of fresh onion and garlic, you can season the beef with onion powder and garlic powder, or even dried minced onion and garlic.
    • Cheese: It's the chefs choice when it comes to cheese. I like to use a mix of sharp cheddar and mozzarella, but this keto pizza is delicious with just about any kind of cheese. For a true cheeseburger experience, try topping it with slices of American cheese. Try this Keto Cheese Sauce Recipe
    • Pickles: I know you are probably still trying to come around to the idea of pickles on pizza, but if you do not have any pickles on hand, you can spread a couple tablespoons of relish over the top of the pizza. Try these Dill Pickled Deviled Eggs.

    How to make fathead pizza dough

    STEP 1: Preheat oven to 425°F. In a large microwave safe mixing bowl, combine the mozzarella and cream cheese. Microwave for 1 minute.

    STEP 2: Remove from microwave and stir to combine. Return to microwave for 1 additional minute.

    STEP 3: To the mixing bowl, add the egg, almond flour, garlic powder, onion powder, Italian seasoning, salt and pepper.

    STEP 4: Mix until all ingredients are well incorporated.

    How to make Bacon Cheeseburger Pizza

    STEP 5: Line a 12 inch pizza pan with parchment paper. Spread the "dough" into a thin but even layer, covering the pizza pan. If the dough gets too stringy and unworkable, simply put it back in the microwave for 1 minute to soften.

    STEP 6: Bake on the middle rack for 10-12 minutes or until golden brown. Watch it to make sure that it does not bubble up. Use a toothpick to pop any bubbles, if necessary.

    STEP 7: To a skillet over medium heat, add the ground beef, onion, garlic, salt, and pepper.

    STEP 8: Sauté until the ground beef is cooked through and the onions are soft. Drain any excess grease.

    STEP 9: Mix the low carb pizza sauce with the yellow mustard and set aside.

    STEP 10: Spread the pizza sauce evenly over the pizza crust. 

    STEP 11: Top with half of these cheese.

    STEP 12: Pile on ground beef, onion, and garlic mixture.

    STEP 14: Spread on the crumbled bacon.

    STEP 15: Top with pickle slices.

    STEP 16: Reduce oven to 350°F and bake for an additional 10 minutes or until the cheese is melted and bubbly.

    • Storage: Store leftovers in the refrigerator for up to 4 days.
    • Reheating: I recommend reheating this bacon cheeseburger pizza in oven or the air fryer.
    • Make ahead: You can make the fathead pizza dough ahead of time and either keep it in the fridge overnight or freeze it. If you are going to freeze it, you will want to make sure that you have shaped the dough into a pizza crust first.

    • Top it with eggs: Top this pizza with a couple of eggs cooked anyway you like to make a delicious keto breakfast pizza
    • Add mayo: pickles? mayo? Have I gone crazy? Perhaps! But this is also delicious with a swirl of mayo on top. Or to make it easier, you can always dip it in mayo.

    Can you use fresh mozzarella for fathead dough?

    Fathead dough is best when fresh, but it can be frozen. For best results, I recommend forming it into a pizza crust before freezing.

    Can you make fathead pizza crust ahead of time?

    Yes! You can make the crust the night before and leave it in the fridge until you are ready to use it.

    Description

    What is better than eating a juicy cheeseburger or a fresh, hot slice of pizza? Combining the two of course! This Keto Bacon Cheeseburger Pizza Recipe checks both of those boxes. Low carb and gluten free pizza crust, topped with homemade pizza sauce, a mix of cheeses, perfectly seasoned ground beef, crispy bacon, onions, garlic, tomatoes and even pickles. Yes! Pickles on pizza. Just trust me on this one. 


    Ingredients

    For the Crust

    • 1 ½ cup mozzarella cheese, shredded
    • 3 tablespoons cream cheese
    • 1 large egg
    • ¾ cup blanched almond flour (I use this brand)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • 1 teaspoon sea salt
    • ½ teaspoon black pepper

    For the Toppings

    • ½ cup low carb pizza sauce (get the recipe here)
    • 2 teaspoons yellow mustard
    • ½ pound ground beef
    • 2 cloves garlic, minced
    • ½ cup diced onion (about 2.5 oz)
    • 4 slices bacon, cooked crisp and crumbled
    • 15 dill pickles slices
    • 1 ½ cups shredded cheese (I used a combination of sharp cheddar and mozzarella)


    Instructions

    For the Crust

    1. Preheat oven to 425°F.
    2. In a large microwave safe mixing bowl, combine mozzarella and cream cheese. Microwave for 1 minute. Remove from microwave and stir to combine. Return to microwave for 1 additional minute.
    3. To the mixing bowl, add egg, almond flour, garlic powder, onion powder, Italian seasoning, sea salt and black pepper. Mix until all ingredients are well incorporated. (It will be stiff and hard to mix)
    4. Line a 12 inch pizza pan with parchment paper. Spread the "dough" into a thin but even layer, covering the pizza pan. If the dough gets too stringy and unworkable, simply put it back in the microwave for 1 minute to soften.
    5. Bake on the middle rack for 10-12 minutes or until golden brown. Watch it to make sure that it does not bubble up. Use a toothpick to pop any bubbles, if necessary.

    For the Toppings

    1. Mix the low carb pizza sauce with the yellow mustard and set aside.
    2. In a skillet, over medium heat, combine the ground beef, onion, garlic, salt, and pepper. Sauté until the ground beef is cooked through and the onions are soft. Drain any excess grease.

    Putting it all together

    1. Spread the pizza sauce evenly over the pizza crust. 
    2. Top with half of these cheese.
    3. Pile on ground beef mixture.
    4. Top with remaining cheese, crumbled bacon and pickle slices
    5. Reduce the heat to 350°F and bake for an additional 10 minutes or until the cheese is melted and bubbly.

      This looks amazing ! One question: In the picture, I see that you do the pre-baking of the crust on the parchment paper. However, when it goes back into the oven with all the toppings, it does not appear to have the parchment paper. Is it easy to slide off the parchment paper and will that help the bottom to crisp/brown up a little better? Thanks for all of your recipes. Really enjoy looking at them !

      Finally made this this past Friday evening...I say finally because, while I've had this recipe in my "to do" stack, every time I would look at it the warm dill pickles just didn't sound good... I reminded myself that I have always been happy with your recipes...always delicious, and I can sneak them in to my significant other who resists this lifestyle. True to form and sure enough...this Bacon Cheeseburger Pizza was fabulous! I'm typically not a "changer" to recipes, but I did leave out the 1 tsp sea salt in the crust...I've learned over time that with all the cheese in some dishes, we don't like extra salt. Oh, and then, in my pack of bacon that I needed to use, I had 5 pieces...so, ummm, you can not go wrong with additional bacon, right?!? I'm actually wondering how long I need to wait to make it again!!

      I just made this crust but the only toppings I had were onion, peppers and pepperoni. The crust was so awesome! It burnt a little at the last but wow! Thank you so much for this and the other recipes, I've been pinning my heart out.

      I made this for my husband's birthday this last weekend (He's a pizza guy.), and I got rave reviews about it. He came kicking and screaming along for the LCHF lifestyle and didn't enjoy the keto flu. Thankfully, finding sites with recipes like yours are keeping him happy. My guy is in end stage renal failure, and I'm excited to announce that his bloodwork numbers are already looking better after one month. One of the dialysis nurses said to him, "I don't understand it. You seem to eat a "normal" diet, but your numbers are getting better while others' are getting worse."       Wow, just finished off a pan of this... YUM!! It's been eleven months since I started my low-carb journey and have already lost 120 pounds, but I have been craving pizza something fierce.
