It is so each to make different copycat lara bar recipes. Once I started, I couldn't stop. I made about 10 different flavor combinations. I am not typically a fan of low carb protein bars or other snack bars. They have just never really been my thing. But when I tried Lara Bars, I fell in love. A little higher in carbs than I would normally eat but an excellent natural source of fuel before a workout or during our nice long spring and summer hikes. The cherry pie flavor is my favorite! After looking at the ingredient list and noticing how minimal it was, I instantly knew that I could quickly and easily make my own copycat Lara bars. I started with this variation and things just took off from there. I ended up making lemon, key lime, plum coconut and Almond Joy Fruit and Nut Bar variations. Easy and delicious!!

Paleo Lara Bar Copycats - Pumpkin Pie Fruit and Nut Bars
- Total Time: 15 minutes
- Yield: Makes 10 Bars 1x
Ingredients
- ½ cup raw cashews
- ½ cup raw pepitas
- 1 cup Deglet Noor dates, pitted and chopped
- ½ cup dried apricots
- 2 tablespoons Pumpkin Pie Spice (get the recipe here)
Instructions
- Grind cashews and pepitas in food processor until they are finely chopped. Add dates, apricots, and pumpkin pie spice. Pulse until all ingredients are combined and evenly sized.
- Pour mixture between two sheets of plastic wrap. Use your hands to press and form the mixture into a compact rectangular shape. Wrap the plastic wrap tightly around it and refrigerate for 1 hour. This will allow it to firm up and make it easier to cut into bars.
- Remove from fridge and cut into 10 bars.
- Individually wrap the bars in plastic wrap and store them in the fridge.

I made both the pumpkin pie fruit and nut bars and the almond joy fruit and nut bars for my grand kids - both are excellent and in my opinion they taste better than actual Lara Bars! I did add a tsp. of vanilla extract to the almond joy mixture because it seemed a little dry and that little bit of moisture seemed to help them hold together. To address the comment of them being dry, I think a little bit of water or flavor extract will do the trick - or soak the dates and drain them prior to processing. Hello
I have attempted this recipe twice and both times the bar crumbles - it wont harden into a bar.
I love the taste- I scoop the powdered fruits with a spoon -but would much prefer a bar.
Please -what am I doing wrong?
PS I do not have a food processer- I do grind the nuts -hand cut the dried fruit and toss everything til coated.-first attempt mixed everything in blender
press into a bar shape and chill overnight-tried freezing but still doesn't stick.

I'm not creative @ ALL when it comes to cooking. Do you think there could be a different dried fruit that would work besides apricots? I just can't stand them for some reason. LOVE the dates though!

Honestly you can't even taste them. You could probably get away with just omitting them and not even adding a substitution.
