    Keto Sausage Egg McMuffins

    When I was a kid and I was just starting to learn how to cook, one of the very first things I learned was how to fry an egg. From there, I became obsessed with eating fried egg sandwiches, slathered in an obscene amount of mayonnaise. Don't even get me started on my love of mayo!

    I always left the yolk runny and that first bite into a mayo covered, ooey gooey yolk, sandwiched between two soft pieces of white bread was pretty much childhood bliss. Every. Time.

    Just try this Keto McMuffin Sausage and Egg Breakfast Sandwich for yourself and you will see what I mean. For this recipe I used a store bought sausage, but I included a link to my Maple Chicken Breakfast Sausage in the recipe also.

    Keto Sausage and Egg Breakfast Sandwich

    Description

    NOTE To make these perfectly round shaped eggs, I cooked the eggs in the ring of a mason jar lid. Super easy and it was something I already had around the house. You can also get silicone egg molds to do the trick. Pick some up here


    Ingredients

    Scale
    • 1 tablespoon butter
    • 2 large eggs
    • 1 tablespoon mayonnaise, optional
    • 2 sausage patties, cooked (find my recipe here)
    • 2 slices sharp cheddar cheese
    • a few slices of avocado

    Instructions

    1. Heat the butter in a large skillet over medium heat. Place lightly oiled mason jar rings or silicone egg molds into the pan.
    2. Crack the eggs into the rings and use a fork to break the yolks and gently whisk. Cover and cook for 3 to 4 minutes or until eggs are cooked through. Remove the eggs from the rings.
    3. Place one of the eggs on a plate and top it with half of the mayonnaise. Top the egg with one of the sausage patties.
    4. Top the sausage patty with a slice of cheese and avocado.
    5. Put the second sausage patty on top of the avocado and top it with the remaining cheese.
    6. Spread the remaining mayonnaise on the second cooked egg and put it on top of the cheese.
    7. Serve and enjoy!

      Great recipe! I used the a pepper cut in a "ring" to contain the egg so it would be uniform for both eggs 🙂
      Never hurts to add a veggie!

      Holy moly are these a game changer on your keto diet. I needed more variety for my breakfast and this was the perfect addition. Can switch up the toppings easily. I made a batch for the week and have been adding different toppings such as avocado, tomato, spinach and jalapenos. Next I am going to see if they freeze well!           I’ve frozen egg cups without a problem. I’d just let it cool completely then wrap them up in wax paper and foil. I would split it in half and wrap each up in a paper towel to reheat in the micro.

      Absolutely Delicious - I did use bought patties - need to watch sugar in those.
      I did spot this in your latest book (which I borrowed from my library)

      I just had this for breakfast with chorizo and smoked gouda. I added green onions, lettuce, sriracha, and nutritional yeast. It was so delicious and filling...not to mention beautiful. Thank you for the great idea!
