The best keto bagel recipe ever
I'm not usually a fan of sweet bagels, savory is my jam, but there's something about these cinnamon sugar bagels that is just the best. If you can tolerate dairy, these keto cinnamon sugar bagels are a must try. They've got the classic flavors and textures of fresh cinnamon sugar bagels, without all the sugar. You can store them in the fridge, then slice and toast. I highly recommend topping them with whipped cream cheese.
What are fathead bagels?
Fathead dough is a keto dough made mostly from mozzarella, cream cheese, eggs, and usually coconut flour, or in the case of these keto cinnamon sugar bagels, almond flour. You can use fathead dough to make keto pizza, gluten free bagels, and more. I even have a nut-free fathead dough. Fathead bagels are great because the fat content makes them nice and doughy, just like a real bagel.

Keto Cinnamon Sugar (free) Bagels
- Total Time: 28 minutes
- Yield: 6 bagels 1x
Ingredients
For the bagels:
- 2 cups almond flour (get it here)
- 1 tablespoon baking powder
- 1 tablespoon granular erythritol
- 1 teaspoon of ground cinnamon
- 3 large eggs, divided
- 3 cups shredded low moisture mozzarella cheese
- 5 tablespoons cream cheese
For the topping:
- 2 tablespoons additional erythritol
- 2 teaspoons of additional cinnamon
For serving:
- Cream cheese, softened
Instructions
- Preheat oven to 425°. Line a rimmed baking sheet with parchment paper or a Silpat.
- In a medium mixing bowl, combine the almond flour, baking powder, erythritol and cinnamon. Mix until well combined. I like to put the mixture through a flour sifter to ensure that all the baking powder gets mixed in with the rest of the ingredients.
- Crack one of the eggs into a small bowl and fork whisk. This will be the egg wash for the top of the bagels. The other two eggs will go in the dough.
- In a large microwave safe mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined.
- To the mixing bowl, add the remaining 2 eggs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing.
- Divide the dough into 6 equal portions. Roll each portion into a ball.
- Gently press your finger into the center of each dough ball to form a ring. Stretch the ring to make a small hole in the center and form it into a bagel shape.
- Brush the top of each bagel with the egg wash.
- Combine the erythritol and cinnamon for the topping and sprinkle over top of the bagels
- Bake on the middle rack for 12-14 minutes or until golden brown.

So good!! I accidentally used the full 8 oz brick and cut into 24 squares so next time I’ll cut it back. Any idea if they freeze well after being cooked? I’m not sure the cream cheese would reconstitute well but I’m hopeful that it can because it would be great to be able to have these on hand to pull out of the freezer when needed!

Yes they all freeze beautifully. Let them cool out of the oven and make sure you slice them before you put them in a plastic freezer safe baggie and then pop them in the freezer. When you’re ready to eat one just slice them open and put it in the toaster.

WOW! This came out so delicious! I do the same thing, taking inspiration from a recipe and then changing it up. I had some left over roasted sweet potatoes so I just carmelized onions, browned the turkey in a pan, added some other vegetables, red thai chili paste, and a bit of lemongrass (along with everything you put in the recipe) and it came out amazingly delicious!
