Ingredients in Mixed Berry Chia Jam

ingredients laid out to make homemade chia ham - strawberries, blackberries, raspberries, lemon juice, chia and sweetener

    Ingredients Notes

    • Mixed berries: For this mixed berry chia seed jam, I used a mix of fresh strawberries, raspberries and blackberries. You can also use blueberries. Make individual jam flavors or mix and match all your favorite berries. (Try these Mini Keto Cheesecakes with Blueberries) Frozen berries will also work.
    • Lemon juice: The lemon juice adds a bright acidity to the chia jam. You can also use lime juice or orange juice.
    • Chia seeds: The chia seeds are used to thicken the jam. For a thicker jam, add 1 extra tablespoon of chia seeds (Try this Low Carb White Chocolate Bark)
    • Sweetener: My favorite low carb sweetener option is a mix of monkfruit and erythritol. (I use this brand). If you like a less sweet jam, cut the amount to ½ cup. If you are not worried about keeping the carbs low, you can also sweeten this using 1 to 2 tablespoons of honey or maple syrup.

STEP 3: Remove from the heat and add in the chia seeds. Remove from burner, stirring occasionally, let cool on the stovetop, and then transfer to the refrigerator.

    Recipe Tips and Variations

    • Storage: Store the mixed berry chia jam in a jar with an airtight lid in the fridge for up to 2 weeks.
    • Freezing: This low carb chia jam freezes very well. Let cool completely and then freeze for up to 3 months.
    • Sweetener: This recipe calls for 1 cup of sweetener. If you are not using raspberries and are using all sweeter berries like strawberries and blackberries, I recommend cutting the sweetener amount in half.
    • Add-ins: This chia seed jam is also great with a couple teaspoons of lemon or orange zest. It adds an extra burst of citrus flavor. You can also add a teaspoon of pure vanilla extract. Lastly, you can add some warm spices like cinnamon, ginger, or nutmeg for a delicious fall flavored variation.
    • Getting the taste and texture right: If your jam is too thin, add more chia seeds. If your jam is too tart, add a little more sweetener.

I tried a similar recipe using monk fruit and I found that it crystalized on me. Do you find that happening? I don't have exactly the same brand, I use the Volupta brand from Costco. I'm in Canada and don't have a lot of other products available.
