    This creamy Cucumber Dill Broccoli Slaw is a unique and refreshing spin on a traditional keto coleslaw recipe. With crunchy cucumber, shredded broccoli, carrots, red onion, and cabbage, tossed in a savory dressing made with creamy mayo, fresh dill, garlic, and apple cider vinegar, it is the perfect low carb summer side dish. Best of all it comes together in less than 10 minutes.

    Ingredient Notes

    This Cucumber Dill Broccoli Slaw is incredibly flavorful, while only using common every day ingredients. It is a low carb, gluten free, paleo and even Whole30 compliant.

    • BROCCOLI SLAW: Broccoli slaw is a combination of shredded broccoli stalks, shredded carrots, and shredded purple cabbage. Most grocery stores carry bagged broccoli slaw mix. You can find it next to the bagged coleslaw mix. Check out my Sesame Chicken Egg Roll in a Bowl Recipe. It also utilizes broccoli slaw.
    • CUCUMBER: I used one mini Persian cucumber for this recipe. I chose these cucumbers because they are burpless, and seedless. They are also crunchier and less watery that a regular cucumber. You can also use half of an English cucumber.
    • FRESH DILL: If you do not have any fresh dill on hand, you can also use freeze dried or dried. Freeze dried is a 1:1 substitution for fresh dill. To substitute dried dill, you will want to use only 1 teaspoon.
    • RED ONION: For this keto coleslaw recipe, I used raw red onion. But this is also amazing with the additional of my Pickled Red Onions.
    • APPLE CIDER VINEGAR: If you do not have apple cider vinegar on hand, you can substitute red wine vinegar, rice vinegar, or lemon juice.

    How to make Keto Coleslaw

    STEP 1: Put all the ingredients in a large mixing bowl and mix until well incorporated. For the best flavor, refrigerate for at least 1 hour before serving.

    Recipe Tips and Variations

    • Storage: Store the leftover keto coleslaw in the refrigerator for up to 4 days.
    • Spice it up: For a bit of a kick, try adding some of my Pickled Jalapenos to this Whole30 coleslaw recipe.
    • Sweeten it up: If you like a sweeter keto coleslaw dressing, you can add a little bit of your favorite low carb sweetener. Just add ½ teaspoon at a time until you reach your desired level of sweetness. This is my favorite low carb sweetener.
    • Use coleslaw mix: This is also excellent made with coleslaw mix. Better yet, do half broccoli slaw and half coleslaw for the perfect low carb coleslaw.
    • Add purple cabbage: Give this keto coleslaw recipe some extra heartiness by adding some shredded purple cabbage.

    Frequently Asked Questions

    What if I can't find broccoli slaw at my local grocery store?

    Broccoli slaw is a mix of shredded broccoli stems, carrots, and sometimes purple cabbage. You can find bagged broccoli slaw in the produce department of most grocery stores. You will typically find it with the bagged lettuces and coleslaw mix. If you are not able to find it you can make your own by shredding broccoli stalks, and carrots.

    Can I substitute coleslaw mix for the broccoli slaw?

    Yes, absolutely! It is delicious both ways. In fact, sometimes I make it with half coleslaw mix and half broccoli slaw.

    Is coleslaw keto friendly?

    It all depends how it is prepared. Store-bought coleslaw is typically very high in carbs due to the added sugar in the coleslaw dressing. However, when you are making coleslaw from scratch and are in control of the ingredients, it is definitely keto friendly.

    Ingredients

    • 10 ounces broccoli slaw
    • 1 mini cucumber (Persian cucumber), thinly sliced
    • ½ small red onion, diced (about ¼ cup)
    • ½ cup mayonnaise (get my homemade recipe here)
    • 1 tablespoon apple cider vinegar (I use this brand)
    • 1 tablespoon chopped fresh dill, more to taste
    • ½ teaspoon garlic powder
    • ½ teaspoon sea salt, more to taste
    • ¼ teaspoon black pepper


    Instructions

    1. Put all the ingredients in a large mixing bowl and mix until well incorporated. For the best flavor, refrigerate for at least 1 hour before serving.

      I crave this slaw, I’ve made it many times in the last couple months, most recently with kale slaw. I’ve also used the dressing as a veggie dip.

      I made this the other day and it's delicious. Plain and I put it in a Turkey wrap and it was even better. Hubby doesn't like cucs, so I ate them all.😊 this is one of two websites I get most of my recipes because they are always great. Today I made the sour lemon gummies and I'm in love. Will try more flavors soon.

      This is as delicious as it looks in the picture! Definitely use the sweetener, it really balances out the ACV. I made it with a mix of broccoli slaw and cauliflower slaw. That dressing would also be good on some roasted or BBQ salmon as well. Am actually making it again this weekend.
