    This Keto Waffle Omelet recipe is a delicious way to switch up your breakfast routine. They are light, fluffy and loaded with flavor. Made with ham, sausage, bacon, peppers, onions, mushrooms, and garlic, and then topped with a rich homemade cheese sauce. Best of all, they can be ready in less than 30 minutes.

    Ingredients in Keto waffle Omelets

    Ingredient Notes

    • Eggs: Whisking the eggs with a little heavy cream makes them extra fluffy when cooked. I also like to add a little cheddar or parmesan cheese to the egg mixture as it makes a crust when these waffle omelets are cooked. (More Keto Breakfast Recipes)
    • Meat: I used ground breakfast sausage, bacon, and ham but you can use any meat that you prefer.
    • Vegetables: For the veggies in this recipe I used garlic, onion, mushrooms and bell peppers, but you can use any low carb vegetables you prefer. Spinach and broccoli are also great options.
    • Cheese Sauce: For this recipe I used the homemade keto cheese sauce recipe from my Roasted Cauliflower Steaks with Bacon and Cheese Sauce recipe, but you could also just sprinkle some cheese over top. It is also delicious with a jarred nacho cheese sauce.

    How to Make Waffle Omelets with Cheese Sauce

    Step by Step Instructions

    STEP 1: Preheat the waffle maker. In a large mixing bowl, whisk together the eggs and the heavy cream. 

    STEP 2: Heat the olive oil in a large skillet over medium heat. Add the mushrooms, bell pepper, garlic, white parts of the green onions, salt, and pepper and sauté until the vegetable are tender. 

    STEP 3: In a separate mixing bowl, combine the cooked sausage, bacon, ham, veggies, and the green portions of the green onions.

    STEP 4: Set aside some of this mixture to garnish the top of the waffles with. Mix the rest in with the eggs.

    STEP 5: Lightly grease the waffle maker and ladle some of the waffle omelet mixture into the waffle iron. (The amount will vary depending on the size of your waffle maker. Cook until the eggs are fully set, about 2 to 3 minutes. Repeat this process with the remaining omelet mixture.

    STEP 6: Place two waffles on each plate, top with cheese sauce and garnish with the retained meat and veggie mixture and green onions.

    Recipe Tips and Variations

    • Storage: Store leftover waffle omelets in the refrigerator for up to 4 days.
    • Reheating: I recommend reheating these keto waffle omelets in the microwave or in a pan on the stovetop. To bring the cheese sauce back to life, you may need to add a little cream.
    • Taco: Make a taco variation by cooking ground beef in Taco Seasoning and then mixing some of the cooked beef in with the egg mixture. Top it with the cheese sauce and all of your favorite taco toppings - lettuce, tomatoes, olives, avocado, Pickled Jalapeños or Pickled Red Onions.
    • Make a chili cheese variation: Swap out the meat and vegetables in the recipe for some of my Slow Cooker Kickin' Chili Recipe and top with the keto cheese sauce, green onions and sour cream.
    • Make it dairy free: To make these dairy free keto omelets, simply swap out the heavy cream in the egg mixture for full fat coconut milk or almond milk and omit the cheese sauce.     How much of the egg mixture should I put in the waffle iron?

    This will be dependent on the size of the waffle iron you use. Fill the wells of the waffle iron ⅔ of the way full.

    This Keto Waffle Omelet recipe is a delicious way to switch up your breakfast routine. They are light, fluffy and loaded with flavor.     Ingredients

    • 2 tablespoons olive oil
    • 3 ounces mushrooms, chopped
    • 1 small red bell pepper, chopped
    • 3 cloves garlic, minced
    • ½ teaspoon sea salt
    • ½ teaspoon black pepper
    • 8 large eggs
    • 3 tablespoons heavy cream
    • 8 ounces cooked ground breakfast sausage
    • 6 slices bacon, cooked crisp and chopped
    • 4 slices ham or Canadian bacon, chopped
    • 4 green onions, sliced, white and green parts separated.
    • 1 batch Keto Cheese Sauce

    Instructions

    1. Preheat the waffle maker. Heat the olive oil in a large skillet over medium heat. Add the mushrooms, bell pepper, garlic, white parts of the green onions, salt, and pepper and sauté until the vegetable are tender. 
    2. In a large mixing bowl, whisk together the eggs and the heavy cream. 
    3. In a separate mixing bowl, combine the cooked sausage, bacon, ham, veggies, and the green portions of the green onions. Set aside some of this mixture to garnish the top of the waffles with. Mix the rest in with the eggs.
