    Ingredients

    • Mozzarella - for this recipe, I recommend using a pre-shredded low moisture, part skim cheese.
    • Almond flour - for a chewier, less grainy texture, I recommend using a blanched almond flour or a superfine almond flour.
    • Everything Bagel Seasoning - Instead of buying a store-bought version, I make my own. You can find my recipe here. If you aren't a fan of everything seasoning, you can sub sesame seeds, poppy seeds, or even leave them plain.

    This low carb bagel recipe is made of a version of fathead dough. Fathead dough is usually made with a combination of almond flour, cheese, and eggs.

    What is fathead dough?

    The main ingredients of fathead dough are blanched almond flour, mozzarella cheese, and eggs. Combined, they make an amazing low carb dough that is incredibly versatile and can be made either savory or sweet. I have used it to make Low Carb Empanadas, Keto Chicken Pot Pie, Everything Bagel Dogs, Ham and Cheese Hot Pockets and more.

    Can these bagels be made ahead of time and frozen?

    Yes, you canmake the bagels and freeze them to reheat at a later time. I recommend reheating them in the oven.

    Description

    A quick and easy low carb bagel recipe. Great for meal prep and perfect for an easy weekday breakfast. 


    Ingredients

    Scale
    • 2 cups almond flour (get it here)
    • 1 tablespoon baking powder
    • 1 teaspoon garlic powder (I use this brand)
    • 1 teaspoon onion powder
    • 1 teaspoon dried Italian seasoning
    • 3 large eggs, divided
    • 3 cups shredded low moisture mozzarella cheese
    • 5 tablespoons cream cheese
    • 3 tablespoons Everything Bagel Seasoning (Get the recipe here)


    Instructions

    1. Preheat oven to 425°. Line a rimmed baking sheet with parchment paper or a Silpat.
    2. In a medium mixing bowl, combine the almond flour, baking powder, garlic powder, onion powder, and dried Italian seasoning. Mix until well combined. I like to put the mixture through a flour sifter to ensure that all the baking powder gets mixed in with the rest of the ingredients.
    3. Crack one of the eggs into a small bowl and fork whisk. This will be the egg wash for the top of the bagels. The other two eggs will go in the dough.
    4. In a large microwave safe mixing bowl, combine the mozzarella cheese and cream cheese. Microwave for 1 minute and 30 seconds. Remove from microwave and stir to combine. Return to microwave for 1 additional minute. Mix until well combined.
    5. To the mixing bowl, add the remaining 2 eggs and the almond flour mixture. Mix until all ingredients are well incorporated. If the dough gets too stringy and unworkable, simply put it back in the microwave for 30 seconds to soften and continue mixing.
    6. Divide the dough into 6 equal portions. Roll each portion into a ball.
    7. Gently press your finger into the center of each dough ball to form a ring. Stretch the ring to make a small hole in the center and form it into a bagel shape.
    8. Brush the top of each bagel with the egg wash.
    9. Top each bagel with Everything Bagel Seasoning.
    10. Bake on the middle rack for 12-14 minutes or until golden brown.

    Notes

    If you do not have a silicone baking mat or parchment paper, you can also bake these on foil, in a large donut pan, or on a greased baking sheet.

      Loved these bagels! Came out perfrctly in my donut pan and made one additional small bagel that I baked on the side. I also tested a half of one as a bun for a hot dog topped with some leftover keto chili and cheddar . Yum!!

      I made these exactly to recipe but baked them in a donut pan. It made six plus one on pizza pan. Will definitely make these again. Freezing because these are just for meE

      Just made these after wanting to find a more flavorful fathead dough recipe for bagels. These are SO delicious! I didn't add the everything topping but it didnt matter. They are just as delicious without it.

      Made these tonight !!! I couldn’t find the everything bagel seasoning when i was out so i just put some poppy seeds, onion and garlic powder on top in substitute , and oh my they smell good !! I made a tiny taste tester one and I approve ! Can’t wait for the morning to have an entire one !!! Thanks for the recipe !!

      This is an amazing recipe. I have (evidently been living under a rock and) just recently discovered the wonders of fathead breads. While I am sure this has been shared, these freeze, thaw, and toast beautifully.. I make 12 mini bagels from this recipe. The only unfortunate thing is that the non-keto people in my home also love them, and I can’t claim “sorry family....they’re just for me.”
