    With perfectly crunchy edges, and soft and chewy centers, this is the best Keto Peanut Butter Cookie recipe. These cookies are quick and easy, with just 5 ingredients and less than 20 minutes from start to finish. Best of all, these keto cookies are flourless and low carb, gluten free and sugar free.

    Ingredients in Keto Peanut Butter Cookies

    These flourless Keto Peanut Butter Cookies are one of my favorite low carb dessert recipes. This recipe was first featured in my cookbook - Craveable Keto.

    Ingredients Notes

    • Peanut butter: I used a reduced sugar, creamy peanut butter. This gluten free peanut butter cookie recipe works best with a thicker peanut butter. I do not recommend using a natural peanut butter. (Try these Peanut Butter No Bake Cookies)
    • Sweetener: For this keto peanut butter cookie, I used a mix of monkfruit and erythritol for the sweetener. This is the brand I use. You can use any low carb sweetener that you prefer.
    • Egg: If you have an egg allergy and you need egg free peanut butter cookies, you can substitute the egg with a chia egg, a flax egg, or use this egg replacer.
    • Vanilla extract: To make these flourless keto peanut butter cookies, I recommend using pure vanilla extract instead of imitation vanilla extract. You could also use caramel extract or almond extract.

    How to make the Best Keto Peanut Butter Cookies

    Step by Step Instructions

    STEP 1: Preheat the oven to 350°F. Line a cookie sheet with a silicone baking mat or parchment paper. Place all of the ingredients in a large mixing bowl. Using a hand mixer, mix until the ingredients are well incorporated and form a thick dough. 

    STEP 2: Shape the dough into 1 ½ to 2 inch balls (12 total). Place the dough balls on the cookie sheet, about 2 inches apart.

    STEP 3: Use a fork to flatten the cookies and make crisscross marks on top. Bake for 10 minutes, or until the edges are firm but the centers are still soft. 

    STEP 4: Remove the baking sheet from the oven and place it on a cooling rack. Allow the cookies to cool on the pan before eating.

    Recipe Tips and Variations

    • Add chocolate chips: Make keto peanut butter chocolate chip cookies by mixing ½ cup low carb chocolate chips into the cookie dough.
    • Make a cookie sandwich: Make a low carb peanut butter cookie sandwich by using this Mixed Berry Chia Seed Jam or this Keto Mascarpone Frosting as filling between two cookies.
    • Swap out the extract: In place of the vanilla extract, you can also use almond extract or caramel extract. 
    • Make them paleo: To make paleo peanut butter cookies, swap the peanut butter for almond butter and swap the sweetener for coconut sugar.
    • Make them vegan: To make vegan peanut butter cookies you can substitute the egg with a chia egg, a flax egg, or use this egg replacer.

    How to store and freeze peanut butter cookies

    • Storage: Store cookies in an airtight container on the counter, for up to a week.
    • Freezing: You can freeze the baked cookies for up to 6 months. Alternatively, you can freeze the cookie dough. Simply make the dough, form it into balls and freeze. Then when you are ready to make them, thaw in the refrigerator, flatten, make cross marks and bake.

      My kids loved these, which is a win because they aren’t doing low carb like me. I enjoyed mine with a few Lilly’s chocolate chips and a bit of cream without the guilt! Will be making plenty more of these!
