    Creamy Mexican Slow Cooker Chicken, Low Carb, Gluten Free

    Ingredients

    Scale
    • 1 cup sour cream
    • ½ cup chicken stock
    • 1 - 14 oz can diced tomatoes and green chilies
    • 1 batch homemade taco seasoning
    • 2 lbs chicken breast


    Instructions

    1. Heat slow cooker on low setting.
    2. To the slow cooker, add the sour cream, chicken stock, diced tomatoes with green chilies and taco seasoning. Mix until all ingredients are well combined.
    3. Add the chickens breasts to the slow cooker. Cover and cook on low for 6 hours

      How spicy is it? I love all things spicy, but I'm trying to appease my mom as well, who does not.

        I make this with Rotel diced tomatoes and chiles, and I use the mild to keep it from being too spicy because my kids think everything is too spicy, haha!

      I made this last week, it was so good I made another batch today. At work, I get compliments on how good it smells, but no, I"m not sharing it with anyone. They can make their own. 😉

      By my carb count it's just under 10 carbs total per serving if you divide it into 4 servings, but that may vary with different brands of groceries 😀

      Can't wait to try this recipe! It appears from the pic you're using boneless skinless chicken breast, I'm afraid it may dry out :-/ Have you tried with boneless, skinless thighs or bone in, skin on breast. And can you give me the nutritional info?? Haha, jk! Thanks for the wonderful recipes!! 😉

      These is my best new find this week, thank you. I have to say it's hilarious how I see commenters not satisfied alone with the free recipes, pics, ideas, and access - complaining that the calorie counts aren't included, so 'they might not try them'. Ladies , you really should love on this stuff, because your next generation family members may not have this type of free unlimited access to anything.

      I agree with Kayla. Nutritional information is pretty key and not having it available makes it discouraging to try. Who is going to look up every ingredient for every recipe? And probably end up getting it wrong blowing their carb count or caloric count. It would be really nice if these came with that info which is provided by other bloggers with similar recipes. Just a thought. 🙂

        Jamie, the nutritional analysis is on 90% of the recipes on this website. You say "Who is going to look up every ingredient for every recipe?" Yet that is exactly what you are asking me to do. Websites like fatsecret.com or myfitnesspal.com are great sites for figuring out your macros.

          I am so happy that you responded the way that you did. I am doing paleo and can tell looking at the recipe whether or not it will work. I believe some people are just lazy and want everything done for them.

        Do you carb cycle? If you do, is this a high carb or low carb day recipe? I am just starting carb cycling and am trying to figure it all out. I am looking for recipes and making my shopping list for my trip to the grocery store this morning.
