Keto Chicken Cordon Bleu Soup

Ingredients
- 6 cups chicken stock
- 12 ounces diced ham
- 5 ounces mushrooms, chopped
- 4 ounces onion, diced
- 2 teaspoons dried tarragon
- 1 teaspoon sea salt, more to taste
- 1 teaspoon black pepper
- 1 pound chicken breast, cubed
- 4 cloves garlic, minced
- 3 tablespoons salted butter
- 1 ½ cups heavy cream
- ½ cup sour cream
- ½ cup grated Parmesan cheese
- 4 ounces Swiss cheese
Instructions
- Heat the slow cooker on the low setting.
- To the slow cooker, add the chicken stock, ham, mushrooms, onion, tarragon, salt and pepper. Cover and let cook.
- In a large saute pan, over medium-high heat, pan-sear the chicken in butter and garlic until browned. Add the chicken, along with all drippings from the pan to the slow cooker.
- Next, add the heavy cream, sour cream, Parmesan cheese, and Swiss cheese. Cover and cook on low for 6 hours.

Love this recipe! Just the right amount of richness. Best comfort, cold or/and rainy weather soup ("keto" soup is not needed in this statetment, just Soup lol.). My husband who is not low carb anything but supportive and eats everything I make said this is definitely 5 stars! If I had to say anything about this recipe, add the cauliflower and spinach you mentioned in the outer link in the actual recipe cause it is perfect combination making it tastier and heartier, while the spinach added good contrast. BRAVO

I made this and it is amazing! Even my children liked it. It's getting permanently added to my list. I followed the recipe exactly and felt it was too runny, so I added a tiny bit of Xantham Gum,FYI, for those of us that like a thicker consistency. Other than that it was perfection!

Okay. I admit. I had never cooked with tarragon before, and was a bit nervous about it's flavor description. Then, I remembered that you have never done me wrong. I was tempted to just omit it, but I bought it anyway. I loved it, and feel it took the flavor from what would have been ordinary to extraordinary! I ended up adding extra. 😉 I did make a few modifications in an effort to adjust it to my meal prep for the week. I added a package of cauliflower florets (chopped) to add some bulk (after tasting it made per the recipe), and added an extra four tablespoons of butter to balance out the fat macros for my personal diet plan. I ended up with 7 large bowls of soup for the week, and they are DELICIOUS! This is seriously the quality of food I would expect to receive in a nice restaurant, and makes eating keto/low carb anything but boring. Thank you, thank you for providing so many low carb menu ideas for those of us that are less than creative in the kitchen.

Sooo, so, so GOOD! Thank you! Wonderful use of leftover turkey without that 'leftover turkey' taste! I added a tbsp. worcestershire sauce and added about a cup of kale, cabbage, beet leaf salad mix to the pot. Very good! A keeper~

This looks delicious but I was wondering since I don't like sour cream, could it be replaced with a little bit more cream or maybe more chicken broth?

I made this over the weekend as it was finally a little cool and rainy in Florida. Had some family over Sunday night and it was a huge hit! It is so easy to make and the flavor is Heavenly! Everyone loved it, and for my non-low carb family members, I also included rice to serve it over. However, it is quite filling on its own. Shared some leftovers with my boss for lunch on Monday (she also eats low carb) and she couldn't believe it was low carb. Just a great dish. I will definitely make it again. Thank you for sharing all of your wonderful recipes. It really makes it easy to live a low carb "lifestyle" having so much variety.
