    Cheesy Garlic Creamed Spinach - From The Primal Low Carb Kitchen Cookbook

    There is something so mouth-watering about preparing this creamed spinach recipe with a thick, juicy cut of steak. They complement each other perfectly. This creamed spinach is also delicious stuffed inside of plump, tender chicken breasts and then baked. Looking for a way to get your children to eat more vegetables? Look no further.     Description

    Makes Servings: 4
    Per Serving:
    Calories – 416
    Protein –  13 g
    Fat – 38 g
    Carbs – 5 net g


    Ingredients

    Scale
    • 3 tablespoons butter
    • 4 cloves garlic, minced
    • 2 pounds fresh spinach leaves
    • sea salt and black pepper, to taste
    • 1 cup heavy cream
    • ¼ cup grated Parmesan cheese
    • ¼ cup shredded mozzarella cheese
    • ¼ cup goat cheese

    Instructions

    1. In a large sauté pan over medium heat, melt the butter. Add the garlic and sauté for 1 minute, being careful not to burn it.
    2. Add the spinach. Season with sea salt and black pepper to taste. Sauté until the spinach is wilted. Remove the spinach from the pan and let it drain. You may need to press it in a colander to remove all of the excess moisture.
    3. To the same pan, add the heavy cream, Parmesan, mozzarella and goat cheeses. Lower the heat to low and allow the sauce to thicken, 5 to 10 minutes. Add the wilted spinach back to the pan and toss until evenly coated in the creamy cheese sauce.

      I made this recipe this weekend from your cookbook and it was soooo good! My sauce came out a bit more soupy than what's in the picture but I thought I followed the directions. Any idea of what I did wrong? Should I have simmered the sauce for more than 10 minutes?
      Also everyone needs to buy this cookbook! I normally get a cookbook and flip through the pages and jot down the 5-10 recipes out of the whole book that I have any interest in making. When I started that process with this book and I made it to two pages, I just gave up and said I need to make them all! Every single recipe has been great and even my fiance loves them and he's such a picky eater! Thank you Kyndra!!!

        That is not correct. I added a new recipe card that is supposed to automatically calculate it and the values are off. It is only about 3 net grams per serving

      Is there a good substitute for the goat cheese? I simply cannot eat that stuff. It must be my imagination but I can smell and taste a hint of goat musk... ugh. Just my luck, huh?

        You can simply leave it out or substitute any soft cheese you like. Or a hard cheese and a little extra heavy cream

      I'm so excited to try one of your recipes! I spent an hour last night reading your story and almost cried. It hits so close to home! I'm only a week into ketosis and getting tired of basic food.

      Just wondering .. I'd like to save my fresh spinach for salads but do have several bags of frozen spinach ... How much frozen spinach do you think this recipe would call for?

      I'm sorry. 38g of carbs per serving is not low carb to me. That's more than my entire day's carb count.

        You are looking at the fat content, but okay. The net carbs are 5 grams.
