STEP 1: Heat the chicken stock in a large stock pot or Dutch oven over medium-high.
STEP 2: Cut away ½ to 1 inch from the top of each artichoke. Remove any dead or brown outer leaves. Cut off the stems close to the base so that that artichokes will stand upright.
STEP 3: Place the trimmed artichokes in the pot, sprinkle with the onion flakes and sea salt.

Wow these are so good! My husband who loves artichokes, grew up on his mom’s pressure cooked artichoke recipe that I can never duplicate lol (and we have been married 33 yrs) LOVED this recipe! Each artichoke with vary depending on if they are in season or not and how long they have been in the grocery store. Some will have meatier leaves and some will be woodier (this is when they are out of season or past their prime) That being said, you aren't attempting to eat the entire leaf are you?

What a delicious way to make artichokes! I usually just boil them in water for 30 minutes and serve them with lemon-butter sauce...this was so much more delicious. I used your lemon aioli to dip and it was delicious too. You make it easy for me to be on Keto, Kyndra. : )
