Keto Smoked Sausage Cheddar Beer Soup

Ingredients

- 14 ounces beef smoked sausage, halved and sliced
- 4 cups beef stock
- 12 ounce bottle of gluten free beer (optional - can substitute extra beef stock or even non-alcoholic beer)
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon sea salt, more to taste
- ½ teaspoon black pepper
- 1 cup heavy cream
- 8 ounces cream cheese
- 2 cups shredded sharp cheddar cheese
Instructions
- Heat the slow cooker on the high setting.
- To the slow cooker, add the sausage, beef stock, beer, carrot, celery, onion, garlic, red pepper flakes, sea salt, and pepper. Cook on high for 4 hours.
- Add the heavy cream, cream cheese and cheddar cheese. Stir until there are no longer any clumps of cream cheese. Using a whisk will help this process along. Taste to see if more salt and pepper is desired. Cook for an additional 2 hours.
- Prep Time: 30 Minutes
- Cook Time: 6 Hours

I have never made it on the stove top but you could very easily do it in under an hour.

My mom made it in a dutch oven. She sautéed the veggies and sausage before adding to the broth mixture. It turned out fabulous. Took about an hour.

I looked all over for gluten free beer but couldn't find it. One alternative I found was using low carb beer. There are 2 that I think might - Sam Adams Light and Michelob Ultra. I was thinking of using Guinness but that might distort the taste too much as the flavor is very heavy. Anybody else have any suggestions?

Isn't Keto pretty much gluten-free.? Cause keto cuts out alot more grains.
Good recipe. I think i would use spicier sausage and diced tomatoes next time.

So i've made this twice. the second time I used cheaper and fattier sausage (I do keto so I was like YES MORE FAT).... don't do that!!! It doesn't come together as well if the sausage is too fatty. It still tasted very good but the consistency wasn't there and there were little oil marks on the top layer...

I think it's important to note, that the carb count varies wildly among styles of beer. Use something light (in color) and cheap--an american pils or lager, and you won't go awry.

This looks very good, but conventional beer is made with barely and not gluten free.

gluten free beer is not difficult to find at all. I live in PA so I can't say how easy it is to find in grocery stores but I know it's not very difficult to find as long as you're shopping at a place where the beer selection doesn't "top out" at miller high life.
