This slow cooker keto beef stew is the perfect way to use up any meat and veggies you might have in your fridge and freezer. It is easily adaptable to what you have on hand. It is hearty and rich with slow cooked stew beef, broth, mushrooms, onions, tomatoes, celery, carrots, peppers, herbs and spices.

Recipe Tips and Variations
- Storage: Store leftover keto beef stew in the refrigerator for up to 5 days. Alternatively, you can freeze it for up to 6 months.
- Reheating: This reheats incredibly well and is even better the next day. You can reheat it on the stovetop, in the slow cooker, or in the microwave.
- Thicken it up: To thicken the low carb beef stew broth you can add a teaspoon of xanthan gum. Simply whisk the xanthan gum into a small amount of water to make a slurry and then add the slurry to the slow cooker with the rest of the ingredients. (Try my Slow Cooker Kickin' Chili Recipe)
- Change up the veggies: This recipe is an excellent way to use up any vegetables you have on hand that might have reached that "use it or lose it" stage. Some other vegetables I like to add to this are cauliflower, green beans, broccoli, and rutabaga.
- Add red wine wine: For even more depth of flavor in this low carb beef stew, deglaze the pan with ¼ cup of red wine after searing the beef. Scrape up and mix in any bits that are stuck to the bottom of the pan and then add all those juices to the slow cooker.

I have made this recipe about 5 times so far and it’s super easy and comes out delicious!
I leave it in the slow cooker for about 10 hours cause I love when the beef chunks kinda falls apart in the stew.
Either way it’s fantastic!

YUM!!! So delicious!

I made this today with some slight variations, and oh my gosh it was delicious!
Rather than cut up bell pepper and onion, I bought a bag of them frozen. I think it was a 12 or 16 oz bag with the pepper variety and onion mixed.
Rather than the 4oz of cremini mushrooms, I had an 8 oz package of sliced white mushrooms. I cut them smaller because I didn't want big bites of mushrooms.
I had a bag of whole baby carrots, so I used about 8 oz and cut them into smaller pieces, as well. I could have left them whole, though. I guess I just felt like chopping. LOL
I added two 12 oz bags of frozen cauliflower.
I ran out of oregano, so there isn't quite a teaspoon of it.
I was lazy and used the jarred minced garlic.

Can I thicken it with cornstarch?

I made this but didn’t add the salt as the bacon and stock have plenty it was delicious but way to salty for my palate, now I need to try again with homemade stock. 10/10 would make again

Flavor is amazing but beef totally dried out. Any ide on the culprit? Poor meat quality? Too long cooking? I seared it hoping to avoid that... want to love this recipe but need a fix on the dry meat!

One of the most delicious Keto recipes we have found. I would eat this even if I wasn't eating Keto. Made my new recipe book, for sure! Thank you.

Carrots are not keto what so ever ....
Rule of thumb if a vegetable grows above ground it probably contains low enough carb count to be keto friendly ... if a vegetable grows below ground there high starched high carb vegetables.... #ketocouplelifechange
3 grams of sugar and 6 carbs in a medi carrot

You are definitely entitled to your own opinion. However, foods are not "keto" or "not keto" Keto is a metabolic state. Furthermore, I will never be one to demonize vegetables. In all of the years I struggled with my weight, I can say with absolute certainty that it was not a result of eating too many carrots (or other "not keto" vegetables.

The recipe calls for 1 large carrot. Are you going to eat the entire carrot in one sitting? Lol ... I seriously doubt that will knock you out of ketosis. You can always leave the carrot out if you're so concerned about it.

How long would you cook this is you used an Instant Pot instead of a crock pot? Sounds delicious!
Nicole says
6 hours in the slow cooker = 18 min in the instant pot
Michala Martin says
I do need to add, however, that it does not yield 10 servings if they’re 1cup each. I followed the recipe exactly and I got exactly 6 servings at 1 cup each. Because of that, I wanted to double check the nutrition info. When I put it into MyFitnessPal the nutrition info is almost 11net carbs per serving. Still fine with me, just wanted to make sure others were aware.
Rebecca says
Thanks for that michala! I’m going to try it in my instant pot tonight.
