    This Keto Philly Cheesesteak Casserole Recipe comes together in less than 30 minutes, and only dirties one pan. Tender roast beef, a medley of bell peppers, sweet onions, mushrooms, and garlic, topped with melty cheese. It is the perfect easy weeknight dinner.

    Ingredients in Philly Cheesesteak Casserole

    Ingredients Notes

    The ingredients in a traditional Philly cheesesteak sandwich can be highly debated and are something that a lot of people have strong feelings about. This Keto Philly cheesesteak recipe might not be traditional, but it sure tastes delicious.

    • Roast beef: Traditionally, a Philly cheesesteak is made with thinly sliced ribeye steak. For this keto casserole recipe, I chose to use a deli style roast beef.
    • Bell peppers: Whenever I cook with bell peppers, I always like to use a medley of colors - yellow, orange, red, and green. It's adds so much color to the dish and each variety has a different flavor. (Try these Philly Cheesesteak Stuffed Peppers)
    • Onion: For this recipe I recommend using white onions or sweet onions. (Try this Philly Cheesesteak French Onion Soup)
    • Mushrooms: While mushrooms aren't an ingredient in a classic cheesesteak, they make a delicious addition to this casserole. I used cremini, but you can any variety of mushroom you prefer.
    • Cheese: I used a combination of provolone and mozzarella, but gruyere, fontina, and sharp white cheddar cheese are great option also. It's also delicious with my Keto Cheese Sauce on top.

    How to Make Keto Philly Cheesesteak Casserole

    Step by Step Instructions

    STEP 1: Preheat the oven to 350°F. Heat the butter in a large deep-sided ovenproof skillet or Dutch oven over medium-low heat. Add the onion and garlic and cook until the onion is translucent and the garlic is fragrant, about 7 minutes.

    STEP 2: Add the mushrooms and peppers to the skillet. Cook until the mushrooms release their liquid and the peppers are crisp-tender, about 10 minutes.

    STEP 3: Add the roast beef to the skillet and mix with the vegetables.

    STEP 4: Top with the provolone cheese, then sprinkle the mozzarella cheese over the top. Bake for 15 minutes, then finish under the broiler for 2 to 3 minutes, until the cheese is browned and bubbling.

    Recipe Tips and Variations

    • Storage: Store leftovers in the refrigerator for up to 5 days.
    • Reheating: I recommend reheating this philly cheesesteak casserole in the oven, or on the stovetop.
    • Meal prep: This recipe heats really well and makes for great make-ahead meal prep.
    • Beef: For this keto Philly cheesesteak casserole recipe, I chose to use a thinly sliced deli style roast beef. You can use ribeye, which is more traditional, or any cut of beef you prefer. It is even great with ground beef.
    • Change up the cheese: This is also delicious with parmesan, fontina, gruyere, sharp white cheddar, cream cheese, or any combination of those.
    • Make a sandwich: Pile this philly cheese steak casserole on top of one of my Keto Everything Buns and make a keto Philly cheesesteak sandwich.
    • Spice it up: For a little more kick, add some of these Pickled Jalapeños.

    Description

    Ingredients

    • 1 large green bell pepper
    • 1 large yellow bell pepper
    • 1 large red bell pepper
    • 2 tablespoons salted butter
    • 1 small onion, thinly sliced (about ½ cup)
    • 3 cloves garlic, minced
    • 8 ounces cremini mushrooms, thinly sliced
    • 1 ½ pounds deli- style roast beef, thinly sliced
    • 6 slices provolone cheese (about 6 ounces)
    • 1 cup shredded shredded mozzarella cheese

    Instructions

    1. Cut the tops off the peppers, remove the ribs and seeds, and thinly slice the peppers. Set aside.
    2. Heat the butter in a large deep-sided ovenproof skillet or Dutch oven over medium-low heat. Add the onion and garlic and cook until the onion is translucent and the garlic is fragrant, about 7 minutes.
    3. Add the mushrooms and peppers to the skillet. Cook until the mushrooms release their liquid and the peppers are crisp-tender, about 10 minutes.
    4. Preheat the oven to 350°F.
    5. Add the roast beef to the skillet and mix with the vegetables. Taste, and add salt and pepper, if desired. Top with the provolone cheese, then sprinkle the mozzarella cheese over the top.
    6. Bake for 15 minutes, then finish under the broiler for 2 to 3 minutes, until the cheese is browned and bubbling.

      Hi Kyndra!

      My husband and I love Philly cheesesteaks. We have only a countertop oven that won’t accommodate a large frying pan. Can I prepare the recipe as directed and transfer it to a greased casserole before topping with the cheeses and baking?
