Noticing an abundance of low carb cabbage recipes on my site lately? Well, I typed in the wrong quantity on my online grocery order and ended up with a whole lotta cabbage. 5 heads to be exact. I do not waste food, so I went into crazy cabbage mode and created some pretty delicious new low carb cabbage recipes. I'm pretty sure my family doesn't want to see cabbage gracing their dinner plates any time soon. I took half of this casserole, vacuum sealed it and threw it in the freezer for another time.

Cheesy Sausage and Cabbage Casserole
- Prep Time: 15 minutes
- Cook Time: 35 minutes
- Total Time: 50 minutes
- Yield: 8 Servings 1x
Ingredients
- 2 tbsp olive oil
- 2 tbsp grass-fed butter
- medium head green cabbage, quartered, cored and sliced
- 1 yellow bell pepper, chopped
- 1 cup onion, diced
- 4 cloves garlic, minced
- sea salt and black pepper, to taste
- 14.5 oz can diced tomatoes
- 1 ½ cup crushed tomatoes
- 14 oz smoked sausage, halved and sliced into half moons
- 1 ½ cups mozzarella cheese, shredded
- ¼ cup Italian flat leaf parsley, rough chopped
Instructions
- Preheat oven to 400°
- Heat olive oil and butter in a large skillet over medium heat.
- Once the butter is melted and the pan is heated, add the cabbage, bell pepper, onion garlic, sea salt and black pepper. Sauté until the vegetable are crisp tender and the cabbage is wilted. About 10 minutes.
- Mix in diced tomatoes, crushed tomatoes and smoked sausage. Sauté for 10 minutes.
- Transer to a large casserole dish, top with cheese and bake for 15 minutes.
- Top with parsley before serving.

Tried this recipe last night. Followed the instructions exactly. I have to say, don't waste your ingredients., or your time making this . It was not good. After we each ate one meager serving, I fed the rest to our chickens.

Could/Would you please provide a little more info on why this wasn't good? Was it bland, mushy, too much like soup, too cabbage-y, etc.? The recipes I've made from this site have been great, so I'm curious why this wasn't good. If each of you had just a "meager" serving, I'm thinking maybe you weren't too keen on the recipe to begin with.

Made this tonight and it was loved by all. I will say I put in Italian Seasoning and called it "Pizza Sausage Casserole"--and that worked/distracted from the cabbage. 🙂 I also doubled the meat and put it in a large pan (bigger then 9x13) so we could have a bigger "cheese to filling ratio". Maybe that's why everyone liked it so much! 😉 Thanks for a great lower cost recipe for Low-Carb, we have found it REALLY can add up!!

Tried this today. Though I was skeptical about the cabbage + cheese combination, I have to say it turned out very good. My sausage wasn't very smokey, so I added some powdered smoked paprika. It was really good - hearty, warming, and satisfying. Thanks for the recipe!

I made this tonight for my family. I was a bit skeptical but was pleasantly surprised. All four kids gobbled it up. This was SO good. I did add a little seasoned salt and Italian seasoning to the mixture. I also added a sprinkle of Italian seasoning on top of cheese before baking. DELISH!

This was very good. I took the advice of some others and added a little smoked paprika. I didn’t have crushed tomatoes, so I just broiled 2 tomatoes and smashed them up. The cheese on top is a nice touch but not necessary, as it’s yummy all on its own. My husband does NOT follow a low card diet so he throws it over rice to make it’ a little more filling. This makes it great recipe because it take very minimal work for me to cook for myself as well as my family and still follow a low carb diet! It’s a total win-win!

Thank you so much for posting this and so many other recipes on line. As a result of chemo, my 13 year old has developed high blood sugar, but not quite diabetes. They have had us switch him to a low carb diet to try to bring it under control without more medication. His reaction to most recipes has been, "Wow, I thought chemo killed my taste buds. Just made this, using substitutes for what I had on hand: Two pounds of bratwurst for the 14oz smoked sausage and 6oz tomato paste along with 14oz tomato sauce for the diced & crushed tomatoes. .I didn't put the cheese on top. Instead I mixed it in with the rest of the ingredients. It filled a 9x13 glass casserole dish nicely. Oh, and I sprinkled some paprika on the sauteing vegetables as mentioned in some of the comments plus some cayenne pepper just to spice it up a bit.
Yum! Pretty darned tasty. Too watery though probably because of my tomato substitutions so I just drained it, mixed in a couple teaspoons- of Thicken Up and put the thickened sauce back in the casserole dish.

You didn't say what size pan you used, but I used a 12 in. pan and couldn't get everything into the pan at the same time. I cooked all the cabbage half and then took out between 1/4 and 1/2 of it and put in the pan I was going to use in the oven. I then cooked the rest of the ingredients together and put over what I had removed. Also, you didn't say to drain the tomatoes in the can, I found it to be a little runny. Next time I will drain part of the juice to make it firmer. I have to say, I was nervous about this recipe, was never a big fan of cabbage before going Keto. But both my husband and daughter had seconds of this. This will be a keeper!

Delicious! Only thing I did differently was used sweet Italian sausage instead of smoked. I cooked the sausage prior to adding it to the cabbage mixture and it was amazing! My 13 yr old wants leftovers for lunch!

This was AWESOME! My husband (who doesn’t know I’m making him eat Keto lol) asked that it be on the weekly rotation. I’m practicing mostly OMAD Keto, so mixed in some smoked Gouda to up the caloric content since it is my only meal today and finished with a dollop of (this is going to sound weird) aioli. Also added some crushed red pepper for a little kick.
It was a touch runny and the hubby doesn’t like anything runny, but I do, so used a slotted spoon to scoop his out and a soup ladle to scoop mine.

I asked my hubby this and he thought it would be better pan cooked first but I am all about time and would certainly try it. You would have to add the sausage later as it woukd over cook if you added it to the dutch oven with the other ingredients.

I used a cast iron Dutch oven and it came out great! I also used 2 cans of Rotel diced tomatoes instead of using crushed tomatoes and added some oregano, and red pepper flakes. It was delicious and satisfying! A definite keeper!

Loved this casserole! Made it a couple nights ago and definitely will put it in our regular rotation. Leftovers heated up well also. It turned out a little watery but not enough to be a big deal - it appears the key there is simply to cook down the cabbage enough on the stove before transferring it to the casserole dish. I also added italian seasoning and browned the sausage pieces in the pot before adding the other ingredients.

This dish is a household favorite! I’ve made it as the recipe is written, but I’ve also substituted the smoked sausage for andouille sausage. My Louisiana family prefers the andouille, but either way is delicious!
