    Cheesy Smoked Sausage and Cabbage Casserole - Low Carb, Gluten Free | Peace Love and Low Carb

    Noticing an abundance of low carb cabbage recipes on my site lately? Well, I typed in the wrong quantity on my online grocery order and ended up with a whole lotta cabbage. 5 heads to be exact. I do not waste food, so I went into crazy cabbage mode and created some pretty delicious new low carb cabbage recipes. I'm pretty sure my family doesn't want to see cabbage gracing their dinner plates any time soon. I took half of this casserole, vacuum sealed it and threw it in the freezer for another time.

    Ingredients

    Scale
    • 2 tbsp olive oil
    • 2 tbsp grass-fed butter
    • medium head green cabbage, quartered, cored and sliced
    • 1 yellow bell pepper, chopped
    • 1 cup onion, diced
    • 4 cloves garlic, minced
    • sea salt and black pepper, to taste
    • 14.5 oz can diced tomatoes
    • 1 ½ cup crushed tomatoes
    • 14 oz smoked sausage, halved and sliced into half moons
    • 1 ½ cups mozzarella cheese, shredded
    • ¼ cup Italian flat leaf parsley, rough chopped

    Instructions

    1. Preheat oven to 400°
    2. Heat olive oil and butter in a large skillet over medium heat.
    3. Once the butter is melted and the pan is heated, add the cabbage, bell pepper, onion garlic, sea salt and black pepper. Sauté until the vegetable are crisp tender and the cabbage is wilted. About 10 minutes.
    4. Mix in diced tomatoes, crushed tomatoes and smoked sausage. Sauté for 10 minutes.
    5. Transer to a large casserole dish, top with cheese and bake for 15 minutes.
    6. Top with parsley before serving.

      I made this the other day and it was SO delicious!! I didn't have crushed tomatoes, so I used spaghetti sauce along with the diced tomatoes and it worked out great!

      I have absolutely loved all the recipes I've tried of yours, and can't wait to try more!

      This was absoulutely fabulous and so satisfying! What a great weeknight meal with tons of flavor. Normally when I try a recipe, I follow it as is but this time I used bacon grease, instead of butter, because I had forgot to pick up butter. This is going to be a regular in my rotation.       My husband and I loved this dish and it’s easy. We used Cajun andouille sausage (a little more than called for) and added an orange bell pepper because we had it on hand. He asked me to put this in our meal rotation so it’s a keeper.

      This dish is a household favorite! I’ve made it as the recipe is written, but I’ve also substituted the smoked sausage for andouille sausage. My Louisiana family prefers the andouille, but either way is delicious!

      If I could give this dish 10 stars, I would! I made this meal for my family (none of who follow a keto lifestyle) and they all absolutely loved it.       Excellent! , I used leftover cacciatore sauce that had plenty of Italian seasoning. Followed the directions for sausage and cabbage. Definitely a keeper.

      Loved this casserole! Made it a couple nights ago and definitely will put it in our regular rotation. Leftovers heated up well also. It turned out a little watery but not enough to be a big deal - it appears the key there is simply to cook down the cabbage enough on the stove before transferring it to the casserole dish. I also added italian seasoning and browned the sausage pieces in the pot before adding the other ingredients.
