    This Low Carb Sun-dried Tomato Garlic Dip is perfect as a dip for fresh veggies, salad dressing, or even a sauce for chicken, fish, or pork.
    Low Carb Sun-dried Tomato Garlic Dip

    I am at a loss for words to describe this Low Carb Sun-Dried Tomato Garlic Dip. It is good enough that I just ate the first few bites with a spoon, and I am not ashamed to admit it. In addition to being a great low carb dip for fresh vegetables or even cheese crisps, it also makes a great low carb salad dressing. It is just so versatile. It also makes a great sauce for chicken, pork, or even seafood. You can use it as a sandwich spread with some low carb bread or on a lettuce wrap. You can even use it as a low carb pasta sauce on top of spaghetti squash or zucchini noodles.

    Ingredients

    Scale
    • ¾ cup mayonnaise (get my recipe here)
    • 1.5 ounces sun-dried tomatoes, chopped
    • 5 cloves garlic, minced
    • 2 tablespoons grated Parmesan cheese (sub Nutritional Yeast to make it whole30 compliant)
    • ½ of a lemon, juiced
    • ½ teaspoon onion powder
    • ¼ teaspoon sea salt
    • ¼ teaspoon black pepper
    • a few sprigs fresh parsley

    Instructions

    1. Combine the mayonnaise, sun-dried tomatoes, garlic, Parmesan cheese, lemon juice, onion powder, salt, pepper, and parsley in a food processor (I use this model).  Pulse until well blended and creamy.  Alternatively, this may be done in a high powered blender. (This is the one I use)
