Bailey Irish Cream is one of my all-time favorite liqueurs. It is so good in coffee, or even on the rocks. I just knew that I had to recreate it in a low carb version. This Keto Irish Cream makes for an excellent gift around the holidays.
Ingredients
- 2 cups heavy cream
- 1 cup Irish whiskey
- ⅔ cup powdered sweetener (I use this brand)
- 2 teaspoons unsweetened cocoa powder
- 1 teaspoon instant espresso granules (I use this brand)
- 1 teaspoon pure almond extract
- 1 teaspoon pure vanilla extract (I use this brand)
Instructions
- Combine all the ingredients in a blender and pulse until well combined. Store in the refrigerator for up to 1 month.
Notes
- If you are not a fan of monkfruit, you can use any low carb sweetener you prefer
- Jameson is my favorite brand of Irish Whiskey, but again, you can use any brand you prefer

I am addicted to this stuff! I never liked the "Real" Bailey's, but I LOVE this! There is so much depth of flavor. The first time I made it, I used monkfruit...which I love, but I only had the regular and not the powdered and it does not dissolve like sugar, but it was still delicious. For ease sake, I use a 1/2 tsp. of straight stevia. The cocoa tends to settle, so it's best to put it in a container that you can shake up before pouring. I just made a batch of almond extract AND I bought a quart of it online in case it doesn't turn out like I hope. I next need to make some vanilla extract! I use 1 cup of almond milk and 1 cup of cream...I know I'm not supposed to worry about calories on Keto...but this just seemed like too many, especially being I wanted more than the recommended serving here!

Was way too thick. Had to keep adding more heavy cream. Then went to half and half. I will try it again and use half and half only. It's not bad, but doesn't taste like Bailey's.

If it's too thick, then you likely over blended it. Whipped heavy cream turns into whipped cream. The longer you blend it, the thicker it will get.

OMG - just made this with Jameson Caskmates “Stout” (came highly recommended by the proprietor of my local bottle shop - this version has a smooth, chocolate and vanilla finish, and it was perfect for this recipe). Absolutely DELICIOUS!! And *almost* sin-free, with swerve confectioners 😉🙃😋 Had no problem with thickening...I mixed everything in the Vitamix first (still on pulse), then added the cream LAST - works like a charm! Now, I just need to try this in my cream whipper/siphon (making Keto Baileys whipped cream deliberately - I’m on board, lol). I doubt I’ll ever buy regular Irish Cream ever again 😊❤️
