    Ingredients in Sweet and Sour Cucumbers

    • Cucumbers: For this sweet and sour cucumber recipe, I like to use English cucumbers or Persian cucumbers as they are crunchier than regular cucumbers. (Try this Cucumber Dill Broccoli Slaw)
    • Rice vinegar: Make sure you are using unseasoned rice vinegar and seasoned rice vinegar is loaded with sugar.
    • Soy sauce: I use tamari, which is a gluten free soy sauce. If you cannot have soy products, coconut aminos makes a great substitution.
    • Chili paste: You can get chili paste in varying degrees of spiciness. This is the brand that I use. It is on the milder side.
    • Sweetener: For this keto sweet and sour cucumber recipe, you can use any low carb sweetener that you prefer. I like to use a mix of erythritol and monfruit. This is the brand that I use. Code peace for 15% off.
    • Crispy garlic chili oil: This is my latest obsession. It is garlicky and loaded with umami flavor. It is also very milk. (This is the brand I use)

    How to Make Keto Sweet and Sour Cucumbers

    Step by Step Instructions

    STEP 1: Slice the cucumber in half lengthwise, and then slice into half moons.
    STEP 2: Combine all ingredients in a bowl and toss to mix. Refrigerate for a few hours to let marinate.

    • Storage: Store leftover keto cucumber salad in the refrigerator for up to 2 days.
    • Add carrots: This is also delicious with some shredded carrots added.

    • 1 English cucumber, halved lengthwise and sliced
    • 1 clove garlic, minced
    • 1 tablespoon plus 1 teaspoon unseasoned rice vinegar (I use this brand)
    • 1 tablespoon gluten free soy sauce (I use this brand)
    • 1 teaspoon chili paste (I used this brand)
    • 2 teaspoons toasted sesame oil
    • 2 teaspoons granular sweetener (I use this brand) code peace for 15% off
    • salt, to taste
    • toasted sesame seeds, for garnish
    • crispy garlic chili oil, optional for garnish

    Instructions

    1. Combine all ingredients in a bowl and toss to mix. Refrigerate for a few hours to let marinate.
