Description

This low carb and keto Sweet and Sour Cucumber recipe takes less than 10 minutes to make and is loaded with flavor - fresh cucumbers marinated in bright, acidic rice vinegar, salty, umami soy sauce, toasted sesame oil, and the perfect balance of sweet and spicy from chili paste and low carb sweetener. Ingredients

  • 1 English cucumber, halved lengthwise and sliced
  • 1 clove garlic, minced
  • 1 tablespoon plus 1 teaspoon unseasoned rice vinegar (I use this brand)
  • 1 tablespoon gluten free soy sauce (I use this brand)
  • 1 teaspoon chili paste (I used this brand)
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons granular sweetener (I use this brand) code peace for 15% off
  • salt, to taste
  • toasted sesame seeds, for garnish
  • crispy garlic chili oil, optional for garnish


Instructions

  1. Combine all ingredients in a bowl and toss to mix. Refrigerate for a few hours to let marinate.
