    This Prosciutto Chicken and Broccoli Sheet Pan Meal Recipe couldn't be any easier to make. Tender, juicy chicken, wrapped in fresh sage leaves and crispy prosciutto, with roasted broccoli, tossed in balsamic vinegar, olive oil and spices.     Prosciutto Chicken and Broccoli Sheet Pan Meal

    Ingredients in Prosciutto Chicken and Broccoli Sheet Pan Meal

    Ingredient notes

    • Chicken: For this prosciutto chicken and broccoli sheet pan meal, I used chicken breasts cut into tenders size pieces. You can also use chicken tenderloins or cutlets. (More Keto Chicken Recipes)
    • Prosciutto: Prosciutto is a salted, dry cured Italian ham. You could also use pancetta or even regular bacon. (Try this Prosciutto Wrapped Chicken with Pesto Cream Sauce)
    • Sage: For this keto sheet pan meal, fresh sage leaves really are the best. However, if you do not have any on hand, you can use 1 ½ teaspoons rubbed sage and just sprinkle it on top of the chicken.
    • Broccoli: I like to use fresh broccoli, cut into florets, but frozen broccoli will work also. If you aren't concerned with keeping things keto, you can also serve the chicken with these Air Fryer Potato Wedges in place of, or in addition to the broccoli.
    • Spices: I used garlic powder and onion powder, but you could also use fresh minced garlic and onion, or even dried minced garlic and onion.

    How to make the best chicken sheet pan meal

    Step by Step Instructions

    STEP 1: Preheat the oven to 425°F. Season the chicken tenders on both sides with ½ teaspoon of the pepper.

    STEP 2: Put a sage leaf on top of each piece of chicken. Wrap each piece tightly in a slice of prosciutto.

    STEP 3: In a large mixing bowl, whisk the avocado oil, balsamic vinegar, garlic powder, onion powder, salt, and remaining ¼ teaspoon of pepper until combined. Add the broccoli to the bowl and toss until it is evenly coated in the oil mixture.

    STEP 4: Arrange the chicken in a single, well-spaced layer across a rimmed baking sheet. Arrange the broccoli in a single layer around the chicken. Bake for 20 to 25 minutes, or until the chicken is cooked through and the broccoli is slightly charred and crisp-tender.

    Recipe Tips and Variations

    • Storage: Store the leftovers from this chicken sheet pan meal in the refrigerator for up to 5 days.
    • Reheating: I recommend reheating this in the oven or in a pan on the stovetop.
    • Make ahead: You can make this prosciutto chicken and broccoli sheet pan meal ahead of time by seasoning the chicken and wrapping it in the sage leaves and prosciutto and tossing the broccoli in the oil, vinegar and spices. Then keep it all in the refrigerator until you are ready to cook.
    • Use chicken thighs: You can also make this as a chicken thigh sheet pan meal.
    • Add cheese sauce: This sheet pan chicken recipe is also delicious with some of this Homemade Cheese Sauce drizzled over top.
    • Bread the chicken: For a crispy coating on the chicken, bread them in this Nut Free Keto Breading Mix.

    Frequently Asked Questions

    How do you make crispy broccoli?

    The key to crispy roasted broccoli is to not overcrowd the sheet pan. If the pan is overcrowded, the broccoli will steam instead of roasting.

    Can this be made in the air fryer?

    Yes. To make it in an air fryer, simply follow the same prep, cook time and temp. However, it may be necessary to cook it in 2 or 3 batches.

    • 1 pound broccoli florets

    Instructions

      I used the basics of this recipe but added sweet potatoes (so increased my carbs) and used thighs. So delicious 😋
