Recipe Tips and Variations
Frequently Asked Questions
I recommend using a thicker peanut butter. The natural varieties are very oily and do not work well with this sauce.
Some peanut butter is very high in added sugars, making it high in carbs. Just be sure to check the nutrition labels and read the ingredients.
Yes, but I recommend using the thickest almond butter you can find. It may be necessary to reduce the amount of chicken stock in order for the sauce to still thicken.

Notes
- Net carbs per serving: 8.25g
- Storage: Store leftover Peanut Butter Chicken in the refrigerator for up to 5 days.
- Reheating: I recommend reheating this in a pan on the stovetop and adding a splash of chicken stock and a couple tablespoons of peanut butter to help revive the sauce.
- Add more veggies: This is also delicious with mushrooms, asparagus or broccoli added.
- Sub shrimp: This peanut sauce also works well with shrimp. Since shrimp cook so fast, you can just sauté them right in the sauce.

Had this for my birthday dinner last Friday and it was the best Peanut Chicken I have ever tasted. This recipe was so quick and easy that it will be in our monthly rotation for a good long while. I personally think it was even better as left overs the next day. Thank you!

I made this one pot wonder for dinner tonight and WOW is it DELICIOUS! I made it just like the recipe, but ommitted the cilantro as my husband is not a fan. The chopped peanuts on top are the perfect crunch for added texture. Great recipe that I will definitely be using again and again.

Just made this tonight... absolutely wonderful! I increased the garlic a bit, added some sriracha and a splash of rice vinegar to the sauce but it clearly would have been very tasty as written. My partner who can be a bit skeptical of new dishes thought it was delicious. Thanks for a great, easy recipe to add to our rotation!

This recipe was super easy to make and very tasty. My Dad tried to go back for 3rd's! We paired it with roasted broccoli but this would have been amazing over cauliflower rice or regular rice if not doing keto.
