    Fiesta Cauliflower Rice - low carb, whole30

    To make riced cauliflower, you can give it a few quick pulses in a food processor or you can simply use a cheese grater. I use a cheese grater and it comes out perfect every time. Grate the cauliflower while it is still raw.

    INGREDIENTS
    ¼ Cup Olive Oil
    ½ Cup Onion - Diced
    2 Tbs. Garlic - Minced
    3 Cups Cauliflower - Riced
    1 tbsp Cumin
    2 tsp. Chili Powder
    1 tsp. Garlic Salt
    8 oz. Stewed Tomatoes with Mexican Seasoning
    1 ½ Cups Chicken Broth

    DIRECTIONS

    In a large sauté pan over medium-high heat, add olive oil, onion, and garlic. Sauté for 5 minutes.
    To the pan, add riced cauliflower, cumin, chili powder and garlic salt. Stirring constantly, cook 6-8 minutes.

    Add chicken broth and stewed tomatoes. Use a rubber spatula to break up the larger chunks of tomato. Reduce heat to low, cover, and allow to simmer 30-40 minutes or until all the liquid has reduced. Stir occasionally.

    Prep Time – 15 Minutes

    Cook Time – 50 Minutes

    Makes Servings: 6

    Per Serving:
    Calories – 122
    Protein – 1.75 g
    Carbs – 6 net g

    Fat –9.6 g

      I made this recipe and I felt it was too much cumin. It was good but too much cumin. Then I saw the recipe on another blog and says you add two teaspoons of cumin (not 2 tablespoons) and second I also use the food processor to grate the cauliflower and it was great.
      Thank you again for your recipes, I have done several of them. All delicious!

        You mean 2Tbls of Garlic? It says 1tsp of Cumin.

      I just tried this for a second time(delicious again!) and since it takes so long to rice by hand(I have four small kids so often don't have the time I would like to spend in the kitchen) I decided to try doing it with my food processor. I cut as much of the stem out as I could and then used the grating attachment, and just did it in pulses so it would not end up as mush. It worked beautifully with far less mess:) Just a time saving tip I wanted to share in case anyone else wants to try it:)

      Can you rice/grate cauliflower ahead of time and freeze? I'd like to do this ahead of time in several batches for football/cheerleading/gymnastics nights...

      I was just craving my spanish rice for dinner! I add ground beef and cheddar cheese on top and some sour cream YUM!!
