When it comes to low carb Thanksgiving side dish recipes, keto Christmas side dish recipes, and just gluten free recipes in general, you’ll probably see a lot of cauliflower options. I’ve definitely contributed my fair share of cauliflower recipes on this site, but none of them were paired with a silky, savory, satisfying keto gravy recipe … until now.
What’s the holiday season without mashed potatoes and gravy? There’s nothing better than piling up all your favorites on a plate and drizzling gravy overtop. This creamy cauliflower mash is the perfect complement to my Herbed Butter Roasted Turkey, with a low carb gravy recipe made from the pan drippings. This Creamy Cauliflower Mash with Pan Gravy recipe is so close to the real thing, your holiday guests won’t even know it’s a low carb swap.
How to make keto gravy
If this is your first time hosting a holiday gathering and you’re not sure how to make homemade gravy, typically, it starts with a roux. Since this is a keto gravy recipe, you may be wondering how to make gravy without flour.
That’s where xanthan gum is handy! This keto-friendly thickener in soups, stews, and sauces in place of a roux. A little goes a long way, and you only need 2 teaspoons of xanthan gum for this low carb gravy.
The best creamy cauliflower mash recipe
Most keto mashed fauxtato recipes start with a cauliflower puree. From there, you add in some fat to make the mash creamy and flavorful. My preference for this recipe is cream cheese because it thickens up the cauliflower mash in addition to adding creaminess, making the perfect mashed potato substitution. This is also really delicious with some shredded gruyere cheese, roasted garlic, and chives mixed in.

Creamy Cauliflower Mash with Keto Gravy

Note: If you aren't cooking an entire holiday spread and don't have pan juices from a roasted turkey, you could also use the juices from a roasted chicken. If you want to make the gravy without first making a protein, simply start with 3 tablespoons of melted butter, 2 cloves of minced garlic, and salt and pepper, to taste in place of the pan juices. You can also add herbs like sage, rosemary, and thyme for extra flavor.
Ingredients
For the creamy cauliflower mash:
- 1 large head cauliflower, cored and cut into florets.
- 2 cups chicken stock
- 4.5 ounces cream cheese
- sea salt and black pepper, to taste
- Olive oil, for garnish (optional)
- Fresh parsley, for garnish (optional)
For the keto gravy:
- Pan juices from the Herbed Butter Roasted Turkey recipe
- 2 cups chicken stock
- 2 teaspoons xanthan gum (get it here)
Instructions
For the creamy cauliflower mash:
- Add the cauliflower florets and the chicken stock to a stock pot or dutch oven.
- Cook over medium high heat until the stock comes to a boil. Reduce the heat to medium-low and let simmer until the cauliflower is fork tender, about 20 minutes. While the cauliflower is steaming, make the gravy.
- When the cauliflower is soft, drain the stock from the pan and leave the cauliflower in the hot pot (with the burner off) for a few minutes. This will help remove excess moisture from the cauliflower so that you don't end up with a soupy cauliflower mash.
- Add the cauliflower to a food processor, along with the cream cheese, salt, and pepper.
- Pulse until smooth and fluffy. Taste, and add additional salt and pepper, if desired.
- Garnish with a drizzle of olive oil and parsley, if using.
For the keto gravy:
- Skim the fat off the pan juices, leaving a little for flavor. Strain the remaining pan juices from the Herbed Butter Roasted Turkey recipe and pour into a saucepan.
- In a separate bowl, add the chicken stock and then the xanthan gum and whisk until combined.
- Add the stock mixture to the saucepan and bring the gravy to a boil over medium heat. Reduce the heat to low and let simmer to thicken.
- Remove the gravy from heat and serve with Creamy Cauliflower Mash, Herbed Butter Roasted Turkey, and any of your other favorite low carb holiday dishes.
