KETO POPCORN CHICKEN

INGREDIENTS:

chicken breast

buttermilk

coconut flour

sea salt

black pepper

egg

crushed pork rinds

onion + garlic  powder

STEP 1:

Put the cut up chicken in a bowl, pour the buttermilk over it, cover and refrigerate for 24 hours.

STEP 2:

Set up three shallow bowls: one with coconut flour, salt, and pepper; one with whisked egg; one with pork rinds, garlic powder, onion powder, and paprika.

STEP 3:

Coat each piece in coconut flour, egg wash, then pork rind breading, and place in a single layer across a baking sheet lined with parchment paper.

STEP 4:

Bake for 20 minutes at 425°F in a preheated oven. Check often, until golden brown and crispy.
