KETO CAULIFLOWER PIZZA POPPERS

These Keto Cauliflower Pizza Poppers are the perfect low carb appetizer. Homemade pizza sauce and roasted cheesy cauliflower combine to make a delicious, bite sized pizza popper.

• cauliflower • butter or olive oil • sea salt • canned diced tomatoes • sun-dried tomatoes • garlic • red bell pepper • hard chorizo • fresh basil • black pepper • sharp white cheddar cheese

STEP 1:

Preheat oven to 400°F. Arrange cauliflower florets in a single layer across a baking sheet. Drizzle melted butter, sprinkle with salt, toss to coat, and roast for 15 minutes.

STEP 2:

Heat a large sauce pan over medium. Add tomatoes, sun-dried tomatoes, garlic, bell pepper, chorizo, basil, and black pepper and cook until simmering.

STEP 3:

Reduce the heat to medium-low and simmer for 10 minutes. Transfer to a high powered blender or a food processor and pulse until smooth. 

STEP 4:

Pour the sauce over top of the cauliflower and roast for an additional 10 minutes.

STEP 5:

Remove the tray from the oven, sprinkle cheese over top, and bake for an additional 10 minutes or until the cheese is melted.
