Zesty Guacamole - Low carb, Gluten Free, Paleo

Description

This is serious the best guacamole recipe ever. While you can eat it right away, it is even better if you cover the top with cling wrap and let it sit in the fridge for 30 minutes for the flavors to come together.

Ingredients

  • 6 large avocados, peeled and pitted
  • 4 cloves minced garlic
  • 1 lime, juiced
  • 2 teaspoons sea salt
  • 1 teaspoon cayenne pepper
  • 1 small onion, grated
  • 1 medium tomato, seeded and chopped
  • 1/4 cup Pickled Jalapenos, chopped (get the recipe here)
  • 1/2 cup chopped crispy bacon, optional
  • chopped fresh cilantro, optional


Instructions

  1. In a large mixing bowl, mash together the avocado, garlic, lime juice, salt and cayenne pepper.
  2. Using a microplane grater, grate the onion into the guacamole.
  3. Mix in the tomatoes and jalapeños.
  4. Mix in the bacon, or sprinkle across the top as a garnish, if using.

Notes

To make this recipe paleo and Whole30 compliant, omit the pickled jalapenos or swap with fresh jalapenos.
