Jon's Guacamole - Low carb, Gluten Free, Paleo

This is serious the best guacamole recipe ever. I may be a little biased since my husband made it, but I think you will agree. While you can eat it right away, it is even better if you cover the top with cling wrap and let it sit in the fridge for 30 minutes for the flavors to come together.



  1. In a large mixing bowl, mash together the avocado, garlic, lime juice, salt and cayenne pepper.
  2. Using a microplane grater, grate the onion into the guacamole.
  3. Mix in the tomatoes and jalapeños.
  4. Mix in the bacon, or sprinkle across the top as a garnish, if using.


To make this recipe paleo and Whole30 compliant, omit the pickled jalapenos or swap with fresh jalapenos.
