stew beef
worcestershire sauce
diced tomatoes
garlic
bell peppers
carrots
olive oil
salt & pepper
beef stock
onion
celery
oregano
mushrooms
bacon
garlic powder
Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the beef to the pan and sear until it is browned on both sides. Transfer the beef to slow cooker.
To the slow cooker, add the beef stock, tomatoes, bacon, peppers, mushrooms, celery, carrot, onion, garlic, tomato paste, Worcestershire, salt, pepper, and seasonings.
IMix until all ingredients are well combined. Cover the slow cooker and cook on low for 6 to 8 hours.
De-glaze the pan with stock. Scrape up and mix in any remaining bits of chicken stuck to the bottom of the pan. Add the onions back to the pan, along with the sherry, Worcestershire and thyme.
