Low Carb Pancakes, French Toast and Jam, OH MY!

I'm drooling just thinking of a perfectly toasted grilled cheese sandwich dipped in this Roasted Red Pepper, Tomato, Smoked Gouda Bisque. I still have some left over. I think I know what I'll be making for lunch today.
At just 1 net carb per slice, maybe I'll even have two. Two sandwiches, that is. 9 total carbs per slice, with 8 grams of fiber. Even if you are counting total carbs, this is still a great option to work a slice of fresh baked bread into your day once in a while.

It has been a long time since I had a guilt free piece of toast, slathered in a delicious jam. LC Foods Company sent me a jar of each of their flavors. We didn't waste any time tasting them all.
They all range between 0 - 1 net carbs per serving. The blackberry was a family favorite. We also ate them on french toast and pancakes. Yum!
Of course the kids wanted to go straight for a peanut butter and jelly sandwich. We used the Powdered Peanut Butter that they sent to make sandwiches. So delicious. It just puts so many options back on the table without having to worry about all the carbs and gluten.

I couldn't possibly have a Fresh Baked Loaf of Low Carb Gluten Free Bread in my house without making french toast! French toast is always a good choice. Always! In fact, sometimes when I am craving something sweet in the evening, I will make a quick piece of french toast. It keeps the carbs super low and satisfies the occasional sweet tooth. This bread holds up amazing in the egg wash and cooks up perfectly. I topped it with some sugar free syrup and powdered erythritol. Low carb breakfast perfection!
Low Carb Cereal, for real!
They also sent me their low carb granola cereals. Regular and also their Chocolate Chips and Almond Granola Cereal. Both varieties are low carb, gluten free, diabetic friendly, paleo, and ketogenic. You can read more about them here.
Ingredients - Plain variety: Organic cracked flax seed, organic chopped flax seed meal, salvia hispanica L. milled chia seed grains, inulin (chicory root) fiber, oat fiber, digestion resistant polydextrose fiber, organic stevia rebaudiana leaf natural herbal extracts, and natural luo han guo monk fruit
I couldn’t wait to pour it in a bowl and cover it with coconut milk. A bowl of Chocolate Almond Granola Cereal for only 3 net carbs (coconut milk included)? YES, please! It has a perfect crunch and holds up against the coconut milk without turning into a soggy mess. It is also great for a crunchy snack all on its own. In fact, we ate the plain variety with cheese and salami. It has just a hint of sweetness that was awesome with the savory flavors of the meat and cheese. Yum!

Keto Dessert or Low Carb Pancakes? Both.
Wow! Wow! Wow! I saved the best for last here! This is definitely the dish the kids were most excited to taste test. I don't blame them. Low Carb and Gluten Free Chocolate Peanut Butter Pancakes with Chocolate Chips? Yes, please! Their low carb and gluten free pancake mix is AWESOME! They cook up nice and fluffy and get those perfectly crispy, buttery edges. They certainly did not disappoint. Since we went the syrup route on the french toast, we decided to top these beauties with peanut butter and chocolate sauce.

Taking these low carb pancakes to the next level
The powdered peanut butter mix they sent is only 2.3 net carbs per serving and contains only one ingredient: PEANUTS! Exactly as it should be. Whipping up a peanut butter from the powder saves you a lot of carbs and it is quick and easy to make. I also love added a tablespoon to my post workout protein shake. Delicious! The Low Carb Chocolate Sauce Mix is super easy to whip up and can also be made into a low carb hot fudge sauce and a whipped mousse. It has only 0.6 net carbs per serving.
