Garlic Rosemary Oven Roasted Vegetables with Parmesan
This recipe will be a little different than my normal recipes in that I am not including exact amounts of each ingredient used. I just used a little bit of all the veggies I had in the fridge. You can do this simple recipe with any low carb veggies you have on hand. I will list all the vegetables I used but it was more the butter and the seasonings that made this dish… Hope you enjoy!

An assortment of low carbohydrate vegetables –
Red and Yellow Bell Peppers
3 Tbs Butter
2 Tbs Minced Garlic
1/2 Cup Parmesan Cheese – Finely grated
(2 Tbs. Peace and Love)
***For the seasoning I used: Fennel salt, Garlic Rosemary seasoning, oregano, and black pepper
Preheat the oven to 400*
Chop all your vegetables to the desired sized
Mix the vegetables and place in a large glass baking dish, top with minced garlic, butter and seasonings
Bake for 25 minutes, pull the vegetables out and lightly toss them to make sure the butter and seasonings are evenly distributed
Bake for 15 minutes more, remove from oven and sprinkle Parmesan cheese evenly over the top and bake for an additional 5-10 minutes.
