Heat slow cooker on low setting.
In a large skillet, over medium-high heat, pan-sear cubed chicken in butter. About 5 minutes. This step is optional. You can simply put all the ingredients in the slow cooker and let it get to work, but pan-searing the chicken in salted butter first will add a lot of flavor to the soup.
Add all ingredients to slow cooker and allow to cook on low for 6-8 hours.
