I almost feel like this is my coming clean post all over again. Not really, but sort of. Over the last several weeks, I have gotten a little complacent… less focused. I started skipping workouts, going out to eat more often and indulging in alcohol more often. That is pretty much the trifecta for weight gain. I went back to chaining myself to work and letting bad habits creep back in. If I’m to be completely honest, I’ve just been phoning it in. I haven’t gained any weight but I have been maintaining within the same 3-5 lb range. Maintenance with that small of a fluctuation would be a dream if I was finished with this journey, but maintenance when I still have quite a bit to lose is not ideal. I’m not beating myself up over it. I’m just aware of it and now I am going to fix it. Today was a rude awakening and the perfect reminder to get myself back in the game.
This morning I woke up in a sweaty panic and my heart was beating out of my chest. Waking up anxious was a horrible way to start my day and a reminder of how I used to wake up every morning. I don’t ever want to go back to that. I know that my lack of workouts and my food and drink choices lately led to the anxiety. NEVER underestimate the effect that diet plays on your mental health.
Today I am grateful for peaceful morning yoga sessions. Such an amazing way to set a positive tone for my day and set my intentions.
I got a nice sweat session on in the afternoon. It’s been a while since I pushed myself that hard. It felt great to really get moving again. Without fail, it always puts me in a better mood.

What I ate:
For breakfast I had a bullet proof coffee with coconut oil, butter, heavy cream and a little sugar-free vanilla syrup. It was delicious. So rich, creamy and filling.
For lunch I was craving sausage and eggs. I made scrambled eggs with garlic and herbed cream cheese and a little dill. I ate them with maple sausage links. YUM!
Keeping the holiday nerves calm spending my Thanksgiving relaxed, tranquil and stress free. I applied both at the base of my skull, to the bottom of my feet and to my wrists.
Today I am grateful for a quiet Thanksgiving at home, alone with my husband. One of our favorite things to do together is to have a Staysgiving. We stay in, cook a small feast and usually binge watch something all day. We got the opportunity to have a Staysgiving a few years back and we watched Sons of Anarchy all day. Today we watched movies. We have been so busy this year and have done a ton of traveling. It was really nice to spend some quality time together doing nothing.
Today we took advantage of the clear skies and the cooking schedule and got out in the crisp fall air for a nice long walk. Freezing cold is actually more like it. But, it was blue skies and beautiful.
Our walk was perfectly timed. I baked my first ever pumpkin pie and we decided to make good time of the hour it needed to bake. Not only was this the first time I ever baked a low carb pie, but it was the first time I ever baked a pie at all. Baking has never been my specialty. I wish I could take credit for this recipe. It was so, so good. You can find the recipe here. I changed things up just a bit. I didn’t make a crust at all. That was always my least favorite part anyway. I also added 1/2 cup more pumpkin than the recipe called for and only 3/4 cup heavy cream. I will be making this again and again.
What I ate:
Today I made my very first cooking video. I was making my Cheddar Dill Biscuits for our mini feast and I thought it would be fun to record it. People have been asking me for years to make cooking videos and I just now finally did it. It was a lot of fun. You can expect more to come. For our Thanksgiving mini feast we had Herbed Butter Roasted Chicken (This is also a recipe from my book), Green Bean Casserole (Recipe from my site), Pumpkin Pie, Cheddar Dill Biscuits (Recipe from my book and from my video), Caramelized Onion and Horseradish Cauliflower Mash (Variation of a recipe from my site).
Day 3 back on track and It feels so good. This morning I changed into workout clothes as soon as I woke up and went straight into the gym. I didn’t want to give myself a chance to end up skipping my workout. It felt great to wake up feeling refreshed and ready to go, instead of feeling lethargic and ravaged from a carb binge.
Today I am grateful for people who do not shop on Black Friday. When I see the news coverage from Black Friday sales, I feel disappointed in the human race.

What I ate:
I had bullet proof coffee in my new favorite mug after my workout. It is so comforting on these cold fall mornings.
I am hooked on this breakfast lately. Fried eggs, maple sausage, roasted broccoli and roasted buffalo cauliflower. Strange I know, but such a delicious combination. To make the cauliflower, just toss the cauliflower florets in a combination of buffalo wing sauce and melted butter and roast them in the oven at 400 degrees until they are nice are golden brown and cooked through. I also like to sprinkle parmesan cheese over them before roasting.
Dinner was a nice big plate of Thanksgiving leftovers. I love it when I don’t have to cook and still get to have a home cooked meal. WIN!
Today was our Peace Love and Essential Oils Team Holiday Party. It was so, so fun. We had an amazing turn out. I love having a home full of people, love and laughter. The entire night just warmed my heart. I LOVE my team. I was born to do this. The gift of being able to help people on the path to natural health and wellness is such a blessing. Not only have essential oils changed my own health – mentally and physically, but they have given me a sense of purpose, a deeper sense of community and reciprocity and a whole new tribe. My life is forever changed on every level.
Today I am grateful for a home full of like-minded people all brought together by a common goal. It warms my heart.
No time to get a workout in today. I was busy getting the house cleaned, everything set up for the party and the food made. We set up a DIY station where our guests could make their own all natural oil infused products. People had a lot of fun making their own chemical free products. What I ate:
I made several low carb appetizers – Bacon and Sausage Deviled Eggs, Sausage Stuffed Mushrooms, Meat, Cheese and Veggie Tray, Buffalo Wings, Guacamole, Dark Chocolate Covered Peppered Bacon and there were a handful of non low carb appetizers as well. I was worried we would have too much food but it was almost all gone by the end of the night.
I also made an essential oil and Ningxia Red infused sangria. It was a BIG hit. It was gone long before the party was over. I will definitely be making it again.
Today was a day of rest, relaxation, puppy snuggles and football. We ending up getting tickets to the Seahawks game right at the last minute. SO EXCITING! I decided to stay home and Jon went to the game with a friend. My friend Crystal came over and we watched the game and just hung out. It was a nice relaxing, perfect way to spend the day.
Today I am grateful for puppy snuggles. There is nothing else like it in the world.
Besides, who could resist a face like this? I cannot tell you how many times I will stay in an uncomfortable position just to avoid disrupting one of the dogs. They really do have it made.
What I ate:
Breakfast was bacon, maple sausage and scrambled eggs with some garlic and herb cream cheese. I have been on a scrambled egg kick lately. The weird part is that I have never really cared for my eggs scrambled. The rest of the day I just kind of grazed and snacked.
Today marked the 1st annual Sister Winter Retreat. My sister and I went on an overnight getaway to The Salish Lodge. It is incredibly beautiful there. It overlooks Snoqualmie Falls. We bought a package that included a one night stay, 2 spa treatments, dinner and breakfast the following morning. So worth it! We started our day by shopping at the outlet malls on the way up and then spent a relaxing 24 hours together.
Today I am grateful for all the beauty within my own state. I never have to travel very far to be surrounded by blessings.
We each got a 50 minute tranquility massage. It was AH-mazing. How can 50 minutes possibly go by so fast. I could definitely get used to having massages more often.
What I ate:
We had the most INCREDIBLE dinner. The dining room was too dimly lit to get a photo, but we had filet mignon, crab, hollandaise and french onion soup. I could eat it all day, every day. I ordered a glass of red wine with dinner but could not finish it as I was too full from the delicious dinner. I brought it back to the room with me to enjoy later in front of the fire.
WOW! Where did November go? Where did October go for that matter? Time is just flying by. Are you ready to finish the year out strong? I know that I am. I have been playing around for too long. Time to get back to serious business! What are some goals you have for the month of December and for the new year? I would love to hear them.
Today I am grateful for coffee. Rich, delicious, bold, dark coffee. Yes, I know that was a lot of adjectives, but I have A LOT of love for coffee.
What I ate:
It was another crab filled meal for me. This morning we had crab eggs benedict. This is one of my all-time favorite foods. I ate around the english muffins and asked for a little extra hollandaise.
They had the most beautiful coffee service. I ordered coffee and my sister ordered hot chocolate. Along with the hot drinks they serve a tray with toppings for your drink – different sugars, heavy cream, fresh whipped cream, and assorted chocolate shavings. I will admit, I indulged and added the chocolate shaving and fresh cream to my coffee. Delicious!
After a few days of celebratory events and a lack of working out, I am overall happy with how I did. I indulged a little, held back a little, but most importantly, I made memories with family and friends. Time to tear it up in the gym tomorrow. No time to waste!!
