Enter low carb… I quickly fell in love with this underrated cruciferous vegetable after adapting a low carb, primal lifestyle. It has the unique ability to masquerade as so many other foods – pasta, rice, potatoes and a whole host of other starchy high carb foods. In this post, I have rounded up some of the most creative versions I could find. Maybe one of them is the recipe that will finally convert you as well. The two most common ways to “rice” cauliflower are with a box grater or a food processor. Either will work just fine, but a food processor makes the job quick and easy.
